     Carrot Halwa Recipe | Gajar Halwa | How to make Carrot Halwa with step by step pictures. Carrot Halwa is a popular Winter dessert in the northern parts of the India. It is usually prepared with juicy red carrots. Red carrots are sweeter than the normal carrots and it is perfect for preparing the carrot halwa. Red Carrots are in season during the winters and as the winter has almost come to an end I thought before it’s over I should get red carrots and prepare this delicious and famous Carrot Halwa. Now lets see how to prepare Carrot halwa.

       Step by step Method with pictures:
        1.Peel the skin of the carrots and chop the top and bottom portion of the carrots. You can then grate the carrot. But I was preparing in a large quantity and hence I used my grater.

    2.Once the carrot is completely grated. Heat a pan with 1 tbsp of ghee and then add in the grated carrots. Sauté for 5 mins in a low flame.

     3.Next add in the milk and cook in a medium flame. Keep stirring don’t let it get burnt. When the halwa starts to get thick add in the cardamom powder and mix well.

    4.Next add in the sugar, the halwa tends to get loosen as the sugar melts, keep stirring. Add in the ghee and keep stirring,

     5.Stir and cook until the halwa gets thick and start leaving the sides of the pan.

    6.Heat another pan with 1 tbsp ghee and then add in the cashew nuts and raisins and let them get golden brown remove them from the flame and add it to the halwa along with the ghee.

    7.Mix everything together and switch off the flame.

    Serve as an after-meal dessert with some ice cream. This combination is a bomb.

    Ingredients

    • Carrot – ½ kg
    • Milk – 2 cups
    • Sugar – ¼ cup
    • Cardamom powder – ½ tsp
    • Ghee – 4 tbsp
    • Cashew nuts – 8
    • Raisins - 10

    Notes

    Tastes best when served hot or cold.
    You can add khoya/Mawa ,it makes the halwa richer and creamier.
    Adjust the sugar as per your taste preference and the sweetness of the carrots.

      We don't get such colorful carrots here, so our halwa tends to be paler compared to this. The colour is so gorgeous. I am sure it tastes amazing too.

      Gajar ka halwa is a winter favorite in my house.. sadly we don’t get red carrots here in US.. miss the real red carrots wala halwa.. yours look so delish!!
