Chinese Egg Hakka Noodles Recipe | How to make Egg Noodles step-by-step pictures. Egg noodles come in handy and can be cooked in less time. Just add in all your fav veggies to make the noodles more colorful. You can make this for a snack or even goes for dinner. Now let's see how to prepare restaurant-style Egg noodles.

How to make Egg Noodles
Add water to a saucepan. To this add salt and oil and bring the water to boil.
Once the water starts boiling add the noodles. Cook as per the package instructions.
Once the noodles are cooked al dente switch off the flame and drain the excess water.
Wash it with cold water this will stop the noodles from cooking further. Add little oil and toss the noodles and keep aside till you use.
Heat a wok with oil. Break open three eggs. Add Salt and pepper powder.
Scramble and cook the eggs. Set aside.
Heat oil to the same wok. Once it's hot add finely chopped garlic. Sauté for few secs and then add sliced onions and white of onion.
Sauté for a min and then add sliced capsicum, carrot and even cabbage too. Cook for 2 mins.
Add red and green chili sauce, vinegar, Soy sauce. Combine everything and then add salt and pepper powder.
Next add the cooked noodles and toss everything until combined.
Add the scrambled eggs and toss everything together.
Switch off the stove. Finally garish with spring onions.
Egg Noodles is now ready to serve.
Serving Suggestions
Makes a complete meal by itself. But for an extra kick, you can also serve them with some chicken lollipops or chicken Manchurian. Goes well for lunch or dinner. Perfect for packing them in lunchbox too.
Storing options
Do not recommend storing or freezing. Noodles taste best only when served hot. It is an easy 10 mins dish when the vegetables are cut and ready.

Standard 1 cup measures 240 ml
Ingredients
- 200 gms Hakka Noodles
For Cooking Eggs
- 1 tbsp Sesame Oil
- ½ tsp Pepper Powder
- Salt to taste
- 3 Eggs
For Noodles
- 2 tbsp Sesame Oil
- 5 cloves Garlic
- 2 tbsp Spring onion white
- 2 tbsp Spring onion green to garnish
- 1 Onion Sliced
- 1 cup Bell Pepper / Capsicum Sliced
- 2 tbsp Carrot
- ¼ tsp Pepper powder
- Salt as needed
- 1 tsp Green Chili sauce
- 1 tsp Tomato Sauce
- ½ tsp Soy sauce
- 1 tsp White vinegar
- ½ tsp Sugar

Notes
· Adding sugar is necessary to keep the colour of the veggies and balance in the taste. Also the cooking should be done in a high flame.
· Instead of green chilli sauce, red chilli sauce can also be added.
