How to prepare Ragi Chakka Paniyaram
1. In a saucepan add in ½ cup of Jaggery and ⅛ cup of Water. cook in a low flame and mix well so that the jaggery dissolves.
2. When the jaggery is completely dissolved, Switch off and allow it to cool down a little. Strain the jaggery syrup using a filter and remove the impurities if any and set aside. Remove the seeds from the Jackfruit and chop them into small pieces.
3. Transfer it to a blender and grind it to a fine puree. In a mixing bowl add in the ragi flour, Rice flour.
4. Next add the Jaggery Syrup, Jackfruit puree and coconut Milk.
5. Mix everything to a smooth batter without any lumps. Next add the cooking soda and cardamom powder and mix well. Batter should be of idli batter consistency. Set the batter aside for 30 mins.
6. Heat a paniyaram pan with oil, once it’s hot fill the batter in the pan and cover and cook for 5 mins in low flame.

8. After 3 mins remove the paniyaram and serve hot.
It has a lovely texture and it is very soft too.

Notes
- You can use more jackfruit puree if you require more sweetness.
- If the batter is very thick little water can be added to adjust the consistency.
- When the paniyaram is cooked it will come without sticking to the pan.
