About Lychee
Lychee is a tropical fruit widely grown in some parts of India and China. It has a think reddish brown skin and a pinkish white fruit inside with a seed. The fruit has a sweet taste and perfect for drinks , sauce and are easy to freeze as well.
Ingredients
Lychee - Feel free to use fresh or canned lychees both works well for the recipe. Canned lychee is easily available in amazon , Walmart, Whole Foods and in most supermarkets.
Condensed Milk - For the sweetness and texture we use condensed milk. It helps in skipping the corn flour or any other thickening agents to the ice cream. Swap with any non dairy condensed milk for a vegan version.
Heavy Cream - Forms the base of the ice cream. It helps in a creamy and perfect texture. For a vegan version use coconut cream or any other non dairy heavy cream.
How to make Litchi Icecream
In a mixing bowl take the heavy cream. Whip it at high speed with an electric hand blender or stand mixer for about 2 mins. Beat until soft peaks. It takes close to 2-3 mins to this consistency.
Now add in the condensed milk and then fold gently until the cream and condensed milk combines.
Fold gently. This is the ice cream base we can customize the ice cream with as many flavors as we need.
Now add the deseeded and chopped lychee to the ice cream base and fold gently.
Take the Lychee in a blender and blend them to a coarse paste.
Add the ground lychee to the ice crem base and fold once again.
In a freezer safe bowl pour the ice-cream. Freeze it for a minimum of 8 hours or overnight for the ice cream to set. After freezing scoop the ice cream and serve immediately.
Lychee ice-cream is now ready. Scoop and serve!!
Tips & Variations
You can also use a tsp of vanilla extract if you prefer. It enhances and goes well along with litchi.
There are also lychee extract available in market you can try that as well.
Perfect as an after meal dessert on a hot sunny day.
You can try the same recipe in ice-cream maker as well.
Storage Options
Litchi cream freezes well and you an store them upto 3 months. We have not added any extra preservatives or emulsifiers , still it freezes well for 3 months.
