Kheer is always an inevitable food during the Indian Festivals. It is a sweet dish made with either Milk or Coconut Milk and then sweetened with any sweetener of our choice.

Badam Kheer
Badam Kheer is a simple and delicious kheer that is apt for any day. It is a perfect dessert after a meal. We usually serve them chilled for the best taste.
Ingredients for Almond Kheer
Almond -Almonds or Badam is the base for the recipe. Use good quality Almonds. We blanch and then use them to the kheer.
Full Fat Milk - When it comes to kheer we always consider it rich. And hence use creamy full-fat milk. Avoid using Skimmed or less fat milk.
Sugar - We use Sugar as the sweetener, but just in case you wanted to skip the sugar. You can also use Palm Sugar or Coconut Sugar or any other sweeteners. However while adding other sweeteners there might be a slight compromise in the color of the kheer.
Saffron - Saffron gives a distant flavor and a golden hue to the kheer. So I recommend adding it to the kheer.
Cardamom -As always when it comes to kheer we use cardamom. In case if you want to skip you may replace it with Vanilla extract.
Coconut - Adding coconut is totally optional. If you like the flavor you may add.
Vegan Almond Kheer
If you want a Vegan kheer. Replace Milk with any Nut Milk and skip the ghee addition. Just garnish with toasted nuts. Almond Milk, Oat Milk, or Coconut Milk will work well for the kheer.
Badam Kheer with Almond Flour
If you want a quick version of the kheer, You may replace Almonds with Almond flour in the Kheer. Use the Almond flour along with Saffron and coconut and grind to a fine paste. No need of soaking and blanching the Almonds.

Can we use Condensed Milk in Badam Kheer
Definitely yes. In that case, we may reduce the quantity of sugar added to the kheer.
Can i make kheer with Almond Milk
Almond Milk works well with this recipe. Also, it suits well for the vegan version of the Almond Kheer.
Badam Kheer for babies
Almond kheer works well with the kids, but I suggest replacing sugar with Palm Sugar or Jaggery. It is best for kids above 1.5 years. Anyhow please consult your pediatrician for their opinion once before feeding any foods for the kids.
How to Prepare Badam Kheer, Pictorial
1. Bring in Water to boil, once it comes to a boil switch off the flame and soak in the almonds, let them rest for 2 hours. After 2 hours press the almonds the skin will come out easily. Likewise peel the skin of all the almonds and set aside. In a blender add in the skin peeled almonds, saffron, coconut and cardamom.
2. To this add in few tbsp. of milk and blend everything to form a fine paste and set aside. In a sauce pan add in the milk and let it boil.
3. Allow it to simmer and let the milk get reduced a little, at this stage add in the ground almond paste to the milk and mix well. Cook for 5 mins and then add in the required sugar.
4. Mix well and simmer for another 5 mins and then switch off the flame. In a pan add in the ghee and fry the nuts till golden brown add the ghee fried nuts to the prepared almond kheer. Almond kheer is now ready .Chill it for few hours and serve chilled.
Storage Suggestions:
Almond Kheer or Badam Kheer tastes best when served chill. You may store up to 4 or 5 days in the refrigerator.

Badam Kheer
Standard 1 cup measures 240 ml
Ingredients
- ½ lit Full Fat Milk
- 15 Almonds /Badam
- Kesar | Saffron a generous pinch
- 2 tbsp Freshly grated coconut
- 3 Cardamom Pods
- ⅓ cup Sugar
- 1 tsp Ghee
- Cashew/ raisins or any nuts to garnish

Notes
- Adjust the amount of sugar as per your preference.
- Don’t add too much saffron as it overpowers and spoil the drink.
- Serve chilled for best results
