Funfetti shortbread cookies with step by step pictures. Shortbread is a type of biscuit of Scottish origin. It is made with just four ingredients. Its traditionally made with 3 parts of flour, 2 parts of butter, and 1 part of sugar. It is usually baked at a low temperature to avoid browning.

How to prepare Funfetti short bread cookies
1In a bowl add in the room temperature soft butter and the powdered sugar. Beat well with a whisk or hand blender until the butter becomes creamy and they are combined. Now add in the vanilla extract and beat again until well combined.
2. In another bowel sieve together all purpose flour and salt . Now add the creamed butter and sugar mixture. Mix together and knead to a soft dough. Now add in the funfetti sprinkles and mix again .
3. Now cover the dough in a plastic wrap and refrigerate for about 1 hour. Remove from the fridge and roll the dough using a rolling pin to a uniform thickness about ¼ inch. Now cut into desired shape using a cookie cutter. If the cookie cutter is sticky dip in flour and then cut into desired shapes.
4. Collect the scrapes and repeat the process until all the flour have been used to cut into desired shapes. Meanwhile preheat the oven in 180 deg C for about 10 min. Line cookie tray with parchment paper. Place the cookies and bake in 180 deg C for about 10-12 mins or till the edges of the cookie turn golden brown.
5. Once baked cool them in a wire rack. The cookie may appear soft when they come out of the oven but become crisp when they cool down.
Tips & Variations
- It may appear soft immediately after baking but will become crisp after it cools down.
- It is not too sweet.
- This is the basic short bread cookie recipe. So many variations could be tried from this. You can even skip the funfetti sprinkles addition part.
- You can even add Choco chips,tutti fruity to this basic recipe.
- Store it in a air tight container for a longer shelf life
