    Stuffed Bell Peppers

    A delicious easy to make appetizer that is kid friendly and loved by all. It make an amazing lunch box idea to pack.

    We can prep the filling any time or the week or during the weekends when you make your meal prep. Cook while you pack for lunch box . It is just a 10 mins and easy to make dish.

    Ingredients

    Stuffed Bell Peppers Rings Ingredients

    Tofu - Use Firm tofu. Grate them and use as a stuffing. We can also use paneer instead of tofu

    Cream cheese - Use fresh room temperature cream cheese.

    Onions - Add finely chopped onions, It gives a nice crunch to the filling.

    Cilantro - Finely chop and add fresh cilantro or parsley to the filling.

    Seasonings - Using chili flakes, Cumin powder along with the required salt. It just gives the required spice and flavor.

    Bell Pepper - Use fresh bell pepper. Cut them into 1 inch thickness ring. I used different color bell peppers it gives a nice fresh color pop.

    How to make Stuffed Pepper Rings

    In a mixing bowl add grated tofu and cream cheese.

    Also to this add finely chopped onions and coriander leaves.

    To this add red chili flakes , Roasted cumin powder and Salt.

    Combine everything.

    Slice the bell peppers tonto rings for 1 inch thickness. Remove the seeds and trim the members from inside.

    Now stuff the capsicum rings with the prepared filling. Put them in the fridge for 30 mins.

    Airfryer

    Preheat the air fryer at 400 F / 200 C for 5 mins. Arrange the stuffed peppers in air fryer basket. Spray or Brush with oil. Air fry them at 180 C / 356 F for 12 mins.

    Stove top:

    You can also cook in stove top if you prefer. Heat a heavy pan with oil and once the oil is hot add the stiffed capsicum rings and cook both the sides for 2 mins each.

    Stuffed Bell Peppers Ring are now ready.

    Tips & Variations

    • You can also use boiled and mashed potato for the filling.
    • You can also use paneer instead of tofu.
    • Adjust the spiciness asper your preference.
    • You can also add Italian seasoning , Garlic powder , paprika powder as per your preference.
    • You can prep the filling and use for a week.
    • Freezing the filling helps in making them firm. It prevents the filling from getting disintegrated.
    • Always stuff enough filling so that it stays intact with the bell peppers.

    Serving Suggestions

    Makes a perfect kids lunch box dish. It also goes well as an appetizer for any parties or potlucks. You can also serve this dish if you are on a keto or Low carb diet.

    Storing Options

    Don't recommend storing them after cooking. Instead you can prep the filling and freeze up to a month. Thaw for few mins until it comes to a spreadable consistency and then stiff to the capsicum rings and cook.

    Standard 1 cup measures 240 ml

    Equipment

    • Airfryer / Fry pan
    • Mixing Bowl

    Ingredients

    • 1 cup Tofu grated
    • ½ cup Cream Cheese
    • ½ cup Onion finely chopped
    • 1 tsp Red Chilli flakes
    • ½ tsp Cumin powder
    • Salt as needed for taste
    • 2 tbsp Coriander leaves
    • 2 Bell Pepper cut into rings
