    Aval Sakkarai Pongal | Poha Sweet Pongal

    AVAL SAKKARAI PONGAL

    Aval Sakkarai Pongal or Poha sweet Pongal is prepared with the red rice poha sweetened and cooked with jaggery and moong dal.

    Aval Sakkarai Pongal | Poha Sweet Pongal with step by step pictures. Pongal is here and every year I try to cook some variations in the sweet Pongal and this year it is Poha Sweet Pongal.

    I have used red rice poha for preparing the Pongal ,you can use the white ones too. It is very easy to cook and taste delicious too.

    Aval Sakkarai Pongal | Poha Sweet Pongal

    How to prepare Aval Sakkarai Pongal

    1.    Wash and soak the Poha in water for 10 mins. Then drain the water and set aside.

    2.    Dry Roast the moong dal until a nice aroma comes. Allow it to cool down.

    3.    Wash the moong dal and then cook in water until its completely mashed.

    4.    Add the Jaggery in ½ cup of water, cook till the jaggery is completely dissolved in water, switch of strain the impurities and set aside.

    5.    Once the moong dal is cooked add in the poha and continue cooking in the same vessel.

    6.    To this add in the Jaggery water and mix well. Next add in the edible camphor and crushed cardamom pods.

    7.    Keep cooking until the Pongal consistency is reached, now add in the ghee and cook for another 5 min. Finally add in the milk and switch off the flame. Roast the cashew nuts and raisins (if using) until golden in ghee and set aside. The garnish it with ghee roasted cashew nuts to the Pongal. Serve hot.

    Serve hot .

    Standard 1 cup measures 240 ml

    Ingredients

    • ½ cup Aval / Poha
    • 3 tbsp Moong Dal
    • 3 cups Water
    • ½ cup Jaggery
    • Edible Camphor big mustard size
    • 3 Cardamom pods
    • 2 tbsp Ghee
    • 5 Cashew nuts
    • ¼ cup Milk

    Instructions 

    • Wash and soak the Poha in water for 10 mins. Then drain the water and set aside.
    • Dry Roast the moong dal until a nice aroma comes. Allow it to cool down.
    • Wash the moong dal and then cook in water until its completely mashed.

    • Keep cooking until the Pongal consistency is reached, now add in the ghee and cook for another 5 min. Finally add in the milk and switch off the flame. Roast the cashew nuts and raisins (if using) until golden in ghee and set aside. The garnish it with ghee roasted cashew nuts to the Pongal. Serve hot.

    Notes

    • The Pongal tends to get thick milk after you switch off so add the milk will make it rich and bring the right consistency.
    • Use boiled and hot milk.
    • You can also use coconut milk.
    • You can also cook the moong dal in pressure cooker.

    Masala Vada or Paruppu Vada is a very popular evening snack recipe in south India. It is found almost in all the tea shops. It goes well with tea or coffee.

    Masala Vadai is found almost in all the tea shops. It goes well with tea or coffee. Coconut chutney are goes well together. Tastes best when served hot. We sometimes prepare in for breakfast to serve along with Idli, Dosa or Pongal especially on festival Days. Now lets see how to prepare Masala Vadai.

    What is Masal Vada

    Masala Vada is a crispy fried fritter made of channa dal along with other spices. It is a very popular street food or tea time snack, especially in Tamil Nadu. It is also referred to as Paruppu Vadai. Paruppu in Tamil means Dal or Lentils. As Channa Dal is a lentil we call it paruppu vadai.

    How to make Masala Vadai

    1. Wash and soak the channa dal for 2 – 3 hours.

    2. After soaking drain the channa dal and add this to the blender. In the blender add in garlic pods, dry red chili, Fennel Seeds, and a small piece of ginger.

     3. Blend to a coarse paste.

    Grind to a corase paste

     4. Transfer to a bowl. Next, add in the green chili, Coriander leaves, chopped onions, few channa dal as a whole and required Salt

     5. Add in Hing and Salt. Mix everything together. Shape the vada.

     6. Meanwhile, heat oil for deep frying. Once the oil is hot check by dropping a small piece if it comes up the oil is ready. Add the vada and deep fry in a medium flame until it's cooked on both sides.

    FRy the vadai

    7. Drain and set aside in a paper towel to remove the excess oil.

    Masala Vadai is ready to serve

    Serve hot

    • Flatten the vada well ,So that it will be nice and crispy.
    • Don’t cook in a high flame. The outside might change in colour but inside it might remain un cooked.
    • Goes well with coconut chutney and either tea or coffee.

    Horse gram or Kollu is a best ingredient if you are dieting or in a weight loss journey, It is told as an ingredient which has heat and hence pregnant ladies should avoid taking kollu.
    I usually prepare kollu rasam or kollu sundal with this and my new find is kollu ladoo.

       Step by Step Method with Pictures: 
    1.    Heat a pan and dry roast the kollu in a low flame. Roast until the colour changes to brown slightly. Switch off the flame and allow it to cool down completely. If you taste the kollu it should be crispy ,this is the right stage to switch off.

    • I liked my ladoo to be coarse and hence I grounded the jaggery and kollu together.
    • If you prefer a smooth ladoo. Grind the kollu separately into a fine powder and then add in the jaggery and cardamom pods and grind.
    • The moisture from the jaggery is enough to shape the ladoo and hence no need to add more ghee.
    • You can also add raisins or any other dry fruits to the ladoo.
    • Keeps well for 2 weeks. Store in an air tight container.
    • Roast the horse gram / Kollu until the colour changes slightly , if you taste the kollu it should be crispy ,this is the right stage to switch off.

    Munthiri Kothu Recipe | How to Prepare Christmas Special Munthiri Kothu with step by step pictures and a video. Munthiri Kothu is a special dish usually prepared during christmas or any function mostly in the Kanyakumari district of TamilNadu. It is also popular in some parts of Kerala and Srilanka.
    The principal ingredients used is the green gram, coconut and Palm Jaggery. However, some use normal Jaggery also to prepare Munthiri Kothu.
    I have no idea why this dish is named as Munthiri Kothu. I have assumed and heard from few that just because it is prepared as bunches, I mean after deep frying it will be in clusters and in tamil cluster or bunches mean “kothu”. Munthiri in tamil means Cashew. Usually cashew fruit in its tree will be seen in bunches and hence this dish resembles that it is named as Munthiri Kothu. It may be an assumption also, but I was told so by few elders in the family.
     
    Starting this new year with a traditional dish.Wish you all have a lovely and healthy 2020.May all your dreams come true in this decade. Now lets see how to prepare Munthiri Kothu.

        Step by Step Method with Pictures: 
    1.    Dry Roast the green gram in a low flame until the colour slightly changes brown. Set it aside and cool down. In the same pan roast the grated coconut along with the cardamom pods until the coconut changes slightly golden. Pulse the green gram once and then slowly remove the skin. Repeat this process and remove the skin. You can also ignore this step if you don’t prefer.

    2.    Blend the green gram and cardamom pods to a fine powder. To this add in the roasted coconut and mic well and set aside. Meanwhile in a pan add in the Palm Jaggery and Water.

    3.    It will start to boil and slowly the Palm Jaggery will melt. Once the Palm Jaggery is completely melted switch off the flame.

    4.    Now filter the cooled Palm Jaggery and add it to the powdered green gram and coconut mixture. Mix well and till the Palm Jaggery is fully done.

    5.    Now shape the mixture into equal sized ladoos. If you are not able to shape the ladoos. You can melt and add in more Palm Jaggery. Allow it to rest for 24 hours.

    6.    Wash the raw rice and then allow it to dry for 2 hours and then powder it. Alternatively, you can also use Raw rice powder. To the raw rice powder add the turmeric powder and Salt .Add water and then bring it to a fine paste. Meanwhile heat oil for deep frying.

    7.    Now dip the shaped ladoos in the rice paste and deep fry in a medium flame until its well-cooked. Drain the excess oil and store in air tight containers.

    Make this and enjoy with your family.

    • 2 cup Grated Coconut
    • 6 Cardamom Pods
    • 1.5 cups Palm Jaggery
    • ½ cup Water
    • 1 cup Raw Rice
    • ¼ tsp Turmeric powder
    • Salt a pinch
    • Oil for deep frying

    Instructions 

    • Dry Roast the green gram in a low flame until the colour slightly changes brown. Set it aside and cool down. In the same pan roast the grated coconut along with the cardamom pods until the coconut changes slightly golden. Pulse the green gram once and then slowly remove the skin.     • Shape the ladoos to a smaller size.
    • Usually some 8 to 10 ladoos are deep fried together and after frying it comes together in bunches.
    • You can also use Jaggery instead of Palm Jaggery.
    • The resting time of the shaped ladoos are very important for the Firm mundiri kothu. Else it might break while frying in oil ,so don’t skip this step.
    • Usually Sesame seeds are also added before shaping the munthiri kothu.
    • The no .of munthiri kothu depends on the size you shape them.

    Thin Crust Pizza Recipe with step by step pictures. Thin crust pizza is comparatively yummy than the regular pizza according to me. It is thin and slightly crispy bread with all the toppings.
    I added my kids favourite Paneer as the toppings for my thin crust pizza. Now lets see how to prepare thin crust pizza.

    Thin Crust Pizza Recipe
       Step by step Method with pictures: 
       1.    In a bowl add in luke warm water, to this add in the yeast and Sugar. Set it aside without any disturbance for 10 mins.

    2.    In another bowl, take the flour, to this add in the Salt. The yeast would have bloomed by now, add this to the flour mixture.

    3.    Knead the flour to a soft dough for 5 to 10 mins. Add in the olive oil and knead the dough once again .

    4.    Cover the kneaded dough with a cling wrap and place it in a dark and warm place. let it rest for 2 hours. The dough would have proofed by now. After two hours. Punch in the  dough and knead a little.

    5.    Meanwhile prepare the toppings. Saute the paneer cubes in butter for few mins, Slice the onions, Capsicum and then grate the cheese and keep it ready.

    6.    Grease a baking pan with butter now divide the dough into two equal portions. Take one portion of the dough and then spread the dough with the hand . The dough will be very soft can this can be done easily. The crust should be very thin after spreading it throughout the baking pan.

    7.    Prick the dough with fork and then spread the pizza sauce generously, and then sprinkle it with grated cheese.

    8.    Next add in the onion and capsicum slice. And then add in the butter toasted paneer. Sprinkle in some extra cheese and then red chilli flakes. Preheat the oven at 180 Deg For 15 mins and then bake the pizza at 180 Deg C for 15 mins or until the crust turn light golden.

    Serve hot with tomato Sauce and Enjoy with the family.

    • 1 tbsp Olive Oil

    For Toppings:

    • Pizza Sauce as needed
    • Mozzarella cheese as needed
    • 1 Onion
    • 1 Capsicum
    • 100 gm Paneer
    • 1 tbsp Red chili flakes

    Instructions 

    • In a bowl add in luke warm water, to this add in the yeast and Sugar. Set it aside without any disturbance for 10 mins.
    • In another bowl, take the flour, to this add in the Salt. The yeast would have bloomed by now, add this to the flour mixture.
    • Knead the flour to a soft dough for 5 to 10 mins. Add in the olive oil and knead the dough once again .
    • Cover the kneaded dough with a cling wrap and place it in a dark and warm place. let it rest for 2 hours. The dough would have proofed by now. After two hours. Punch in the dough and knead a little.
    • Meanwhile prepare the toppings. Saute the paneer cubes in butter for few mins, Slice the onions, Capsicum and then grate the cheese and keep it ready.
    • Grease a baking pan with butter now divide the dough into two equal portions. Take one portion of the dough and then spread the dough with the hand . The dough will be very soft can this can be done easily. The crust should be very thin after spreading it throughout the baking pan.
    • Prick the dough with fork and then spread the pizza sauce generously, and then sprinkle it with grated cheese.
    • Next add in the onion and capsicum slice. And then add in the butter toasted paneer. Sprinkle in some extra cheese and then red chilli flakes. Preheat the oven at 180 Deg For 15 mins and then bake the pizza at 180 Deg C for 15 mins or until the crust turn light golden.

    Notes

    • I have used Mozzarella cheese, you any cheese you prefer.
    • Feel free to decorate the pizza with the toppings you prefer.
    • The baking time may vary from oven to oven so check for the doneness when then the pizza moves freely in the baking tray and it becomes golden.
    • From the prepared dough we can make two thin crust pizza. Anyhow that depends on the size of the baking pan used.

    Christmas Bread Recipe | Easy Tutti Frutti Christmas Bread with step by step pictures. Christmas is a season of Baking. The entire season we almost do a lot of baking especially our rich Plum cake.
    So sharing today a yummy Christmas bread, made with tutti frutti. It is mildly sweet and very  soft. Perfect for the season I say. Now lets how to prepare yummy Christmas bread.

       Step by Step Method with Pictures:

        1.In a bowl add in luke warm milk and then warm water. To this add in the 1 tbsp of sugar.

     2.Mix everything well and then add in the Yeast. Let it get activated allow it to rest for 10 mins. In another mixing bowl add in the remaining sugar and butter. Cream both together.

        3.Next add in the all-purpose flour and then add in the yeast and milk mixture.
    Knead well for a minimum of 8 – 10 mins. The dough should be very soft.

       4.Spread it out using a rolling pin and then add in the tutti frutti. Roll it up.

     5.And then shape it to form a round shape. Grease the dough with oil and allow it to proof up for 1 ½ hours. After proofing knead the dough once again. Next place a parchment paper on a baking tray.

     6. Place the bread on the baking tray brush it with milk set it aside for another 30 mins. Sprinkle some sugar on the top. Preheat the oven at 180 Deg C for 10 mins and then bake it at 180 Deg for 30 mins. After baking brush, the top with melted butter once again.

    Yummy Christmas bread is now ready to be served.

So Christmas season has come and I shall be sharing few Last minute Christmas goodies to share with the friends and families. Today it is a simple and yummy and delicious English White Christmas Slice.
     
    There is no as such specific recipe for White Christmas Slice we can add in all our favourite ingredients and make the slices. We can add Condensed Milk ,Marshmallows, Almonds ,Cranberry ,White Chocolate and many more ,today I have tried this with the ingredients I have in my hand. Now lets see how to prepare White Christmas Slice.

       Method: 
    1.    In a mixing bowl add in the Desiccated coconut, Milk powder and Rice Krispies.

    2.    Next add in the Powdered Sugar and Tutti Frutti. Mix everything together.

    3.    Next add in Melted butter and Coconut oil. Mix everything well.

    4.    Grease a tray or plate with butter and transfer the prepared ingredients to the tray. Press well and flatten it to firm. Cling wrap the tray and freeze it for 4 hours. After that remove the cling wrap and slice it and serve. Freeze the slices till you serve.

    5. Freeze the slices till you serve.

    Yummy Christmas Slices are now ready to be served.

    I got this recipe from my office pantry, Where they use to sell this sweet salad in the evening, I liked the taste a lot and tried to replicate in my home. Since then I have tried it so many times. So do try out this simple and healthy Salad for the evening at 4 pm hunger pangs.

    What is Sprouts :

    Sprouting is the process of germinating the seeds in simple terms. The seeds start to bud and grow as we sprinkle water and follow a certain procedure.

    How to grow Moong sprouts:

    Moong sprouts are grown by sprouting the green moong beans or Mung beans. We usually soak the moong beans overnight and then drain the excess water. Wrap the soaked moong beans in a muslin cloth and within 8 hours the beans start to sprout.

    Can we eat the sprouts raw?

    We can eat the sprouts raw. Also, sprouts are easily exposed to bacteria’s. So always handle it clean before you consume.

    How to prepare Moong sprouts Salad

    1.In a mixing bowl add in 1 cup of Moong Sprouts.

    In a mixing bowl add Moong Sprouts.

    2. To this add in the 2 tbsp of Cane sugar

    Add in Cane Sugar

    3. Add in 1 tsp of Gingelly oil

    Add in  Gingelly oil

    4. And then add in a pinch of Salt.

    5. Finally toss well and garnish it with grated coconut and serve immediately.
