    Chemmeen Thoran Recipe | Prawn Stir Fry with step by step pictures. Prawn is one of my favourite sea food. Whenever I buy prawn I always look for a different recipe. But this Chemmeen Thoran is one common side dish mom makes with prawn and it goes perfectly well with White Rice and Fish Fry. Somehow I missed to share the recipe these many days.

    In this thoran Pranws are cooked in a yummy coconut based masala which makes it so flavorful. Now lets see how to prepare Chemmeen thoran.

    ย Step by step Method with pictures:ย 
    ย 1.ย ย ย ย ย 
    Heat a pan with oil, once its hot add in Mustard Seeds and Fennel Seeds ,let them splutter and then add in the curry leaves and Dry red chilli. Saute and the add in the chopped small onions. Saute till they turn glossy.

    2.ย ย ย ย ย Chop the prawn insto small pieces and marinate them with salt, Turmeric powder and chilli powder and set aside. Meanwhile grind the ingredients mentioned under the โ€œTo Grindโ€ section to a coarse paste and set aside.

    3.ย ย ย ย ย Once the onions are done add in the crushed ginger saute till the raw smell leaves and then add in the marinated prawn and then add on the Ground coconut masala.

    ย  4.ย ย ย ย ย Mix everything together and then cover and cook. The prawns will start to leave water and cook. After 5 mins open the lid and cook till the prawns become dry and get cooked completely. Switch off and serve hot with Rice.ย ย 

    Serve with White Rice and Fish Fry.

    Standard 1 cup measures 240 ml

    Ingredients

    • ยผ kg Prawns
    • 1 tablespoon Coconut Oil
    • ยฝ teaspoon Fennel Seeds
    • ยฝ teaspoon Mustard Seeds
    • 1 sprig Curry Levaes
    • 10 Shallots
    • ยฝ teaspoon ginger Crushed
    • 3 Dry Red Chilli
    • ยฝ teaspoon Chilli powder
    • ยผ teaspoon Turmeric powder
    • Salt as needed

    To Grind :

    • ยผ cup Coconut
    • 3 Shallots
    • 3 clove Garlic
    • 2 Dry Red Chilli

    Instructions 

    • Heat a pan with oil, once its hot add in Mustard Seeds and Fennel Seeds ,let them splutter and then add in the curry leaves and Dry red chilli. Saute and the add in the chopped small onions. Saute till they turn glossy.

    • ย Goes well with Steamed Rice.
    • ย Coconut Oil gives and awesome flavour. So donโ€™t miss that.

    Tomato Thokku Recipe | Thakkali Thokku | How to make Thakkali Thokku with step by step pictures. Tomato thokku is an excellent fix for Idli. I usually prepare thakkali thokku during Sundays as it takes a little more time. I will refrigerate for 4-5 days and it keeps really good. Use a iron kadai or a heavy bottomed pan to cook as it need to get cooked till thick.  

    I already have another version of tomato thokku in blog but that method is without grinding the tomato and I find this method of grinding the tomato easy and tasty comparatively. Now lets see how to prepare tomato thokku. Similar Recipes: Coriander Thokku

    Ingredients 

    Tomato - Choose any juice variety tomatoes for thokku. I prefer the local tomatoes over the Bangalore variety as they are juicier. But you can use both based on availability. Avoid cherry tomato or any other small tomato variety.

    Sesame Oil - Be it any pickle or relish close your eyes and blindly go for gingelly oil or sesame oil. It helps in improving the shelf like of the pickle. Also, it plays a major role in taste.

    GARLIC , CURRY LEAVES - We use both garlic pods and curry leaves for flavor. You may also skip them if you do not prefer.

    Hing - Hing gives a awesome flavor , I highly recommend adding. but of you prefer a gluten free version you may skip adding.

    Spice Powder - Just the basic spice powders goes in to the thokku. We add chili powder, Turmeric powder

    Jaggery - Always adding a small piece of jaggery balance the taste and bring in the best flavors. You can also add sugar for the same reason.

    How to prepare Tomato Thokku

    1.Puree the tomato without adding water and set aside.

    2. Heat a heavy bottomed pan with seame oil.

    3. Once the oil is hot add mustard seeds and cumin seeds let them splutter and then add in the Channa Dal fry till golden and then add in the hing and curry leaves.

    4. Let it splutter and wait till the shhh sound goes off.

    5. Next add in the tomato puree.

    6. Let it cook for 10 mins in a medium flame and then add in the Chilli powder, Salt and turmeric powder. Mix well.

    7. Cook for another 10 mins and then add in the jaggery.

    8. Continue cooking till it gets thick and leaves oil.

    Also, Black Urad Dal is very healthy and good of bones especially ladies. Now let's see how to prepare Black Urad Dal Chutney Powder.

    How to make ย Black Urad Dal Chutney Powder

    ย  ย 1.ย ย ย ย ย In a Kadai add in the Balck Urad Dal, Dry Red Chilli, and dry roast till golden and the chili turns crisp Next add in the Cumin seeds and Curry Leaves.

    ย ย ย  2.ย ย ย ย ย Roast till they turn crisp and give a nice aroma. Finally, add in the hing and the salt. Mix well and roast in low flame for another 2 mins and switch off the flame. Transfer all the contents to a plate and allow it to cool completely.ย Blend them to fine powder or coarse powder as you prefer. Let it cool completely and then store in airtight containers.

    Serve with Idli or Dosa. Can also be used to make Podi dosa or Idli.

    Mawa Kheer Recipe | Khoya Kheer | How to make Mawa Kheer with step by step pictures. Diwali is just a few days ahead and I had a really long to do list to try and post for Diwali. But then I had guests over the weekend and work in office kept me really busy that I barely could spent some time for the blog. Even the next weekend I have guests and hence I doubt if I can post more recipes. Without further delay I am posting a simple and rich kheer to try this Diwali.

    Mawa kheer is made with some really simple ingredients. This kheer can be improvised by  adding either rice or vermicelli .Now let see how to prepare Mawa Kheer.

        1.     Soak saffron in 1 tablespoon of milk and set aside. Get ready with the mawa/Khoya. Heat a pan with ghee.

    Chinese Egg Hakka Noodles Recipe | How to make Egg Noodles step-by-step pictures. Egg noodles come in handy and can be cooked in less time. Just add in all your fav veggies to make the noodles more colorful. You can make this for a snack or even goes for dinner. Now let's see how to prepare restaurant-style Egg noodles.

    This recipe of egg noodles is so easy to prepare and perfect kid-friendly meal.

    Ingredients

    How to make Egg Noodles

    Add water to a saucepan. To this add salt and oil and bring the water to boil.

    Once the water starts boiling add the noodles. Cook as per the package instructions.

    Once the noodles are cooked al dente switch off the flame and drain the excess water.

    Wash it with cold water this will stop the noodles from cooking further. Add little oil and toss the noodles and keep aside till you use.

    Heat a wok with oil. Break open three eggs. Add Salt and pepper powder.

    Scramble and cook the eggs. Set aside.

    Heat oil to the same wok. Once it's hot add finely chopped garlic. Sautรฉ for few secs and then add sliced onions and white of onion.

    Sautรฉ for a min and then add sliced capsicum, carrot and even cabbage too. Cook for 2 mins.

    Add red and green chili sauce, vinegar, Soy sauce. Combine everything and then add salt and pepper powder.

    Next add the cooked noodles and toss everything until combined.

    Add the scrambled eggs and toss everything together.

    Switch off the stove. Finally garish with spring onions.

    Egg Noodles is now ready to serve.

    Serving Suggestions

    Makes a complete meal by itself. But for an extra kick, you can also serve them with some chicken lollipops or chicken Manchurian. Goes well for lunch or dinner. Perfect for packing them in lunchbox too.

    Standard 1 cup measures 240 ml

    Ingredients

    • 200 gms Hakka Noodles

    For Cooking Eggs

    • 1 tablespoon Sesame Oil
    • ยฝ teaspoon Pepper Powder
    • Salt to taste
    • 3 Eggs

    For Noodles

    • 2 tablespoon Sesame Oil
    • 5 cloves Garlic
    • 2 tablespoon Spring onion white
    • 2 tablespoon Spring onion green to garnish
    • 1 Onion Sliced
    • 1 cup Bell Pepper / Capsicum Sliced
    • 2 tablespoon Carrot
    • ยผ teaspoon Pepper powder
    • Salt as needed
    • 1 teaspoon Green Chili sauce
    • 1 teaspoon Tomato Sauce
    • ยฝ teaspoon Soy sauce
    • 1 teaspoon White vinegar
    • ยฝ teaspoon Sugar

    Instructions 

    • Add water to a saucepan. To this add salt and oil and bring the water to boil.
    • Once the water starts boiling add the noodles. Cook as per the package instructions.
    • Once the noodles are cooked al dente switch off the flame and drain the excess water. Wash it with cold water this will stop the noodles from cooking further. Add little oil and toss the noodles and keep aside till you use.
    • Heat a wok with oil. Break open three eggs. Add Salt and pepper powder. Scramble and cook the eggs. Set aside.
    • Heat oil to the same wok. Once it's hot add finely chopped garlic.
    • sautรฉ for few secs and then add sliced onions and white of onion.
    • Sautรฉ for a min and then add sliced capsicum, carrot and even cabbage too. Cook for 2 mins.
    • In a bowl add red and green chili sauce, vinegar, Soy sauce. Combine everything and then add salt and pepper powder.
    • Next add the cooked noodles and toss everything until combined.
    • Switch off the stove. Finally garish with spring onions.

    ยท Serve hot with ketchup.
    ยท Adding sugar is necessary to keep the colour of the veggies and balance in the taste. Also the cooking should be done in a high flame.
    ยท Instead of green chilli sauce, red chilli sauce can also be added.

    It tastes good with almost everything and I prepare this at least twice a week. Now let's see how to prepare Tomato gravy in a pressure cooker.

    How to make Tomato gostu in pressure cooker

    1.ย ย ย ย Heat oil in a pressure cooker Once its hot add in mustard seeds let it splutter and then add Cumin Seeds ,Green Chilli, Garlic pods , Crushed ginger andย ย curry leaves saute and then add in the chopped onions saute till glossy.

    ย 2.ย ย ย ย Next add in tomatoes, mix well and then add in the chili powder, Turmeric powder and salt.

    ย 3.ย ย ย ย Mix well and cook till the tomatoes get soft and then add in ยฝ cup of water.

    ย 4.ย ย ย ย Mix well and close the cooker and cook for 2 whistles in a high flame and the in a low flame cook for another 10 mins. Switch off and wait till the pressure is released naturally. Garnish with coriander leaves.

    Yummy and tasty tomato curry is ready in less time.

As we need to break open the shells of crab and then eat the flesh. I learnt this recipe from my mother in law. She cooks crab masala really the best way.

    • Clean the Mutton brain by rinsing well with water and then remove the red vein part. After removing the red vein and clean in water once again.
    • Heat a kadai with oil Once its hot add in mustard seeds let it splutter and then add curry leaves daute and then add in the chopped small onions saute till glossy.
    • Add in the salt, turmeric power and then pepper powder. Mix well.
    • Next add in the cleaned goat brain saute in a low flame. Add in 2 tablespoon of water cook till the its done. It take less than 5 mins to cook. So donโ€™t cook for more time.
    • Once the goatโ€™s brain is completely cooked. Move it to one side of the pan break open the egg and scramble it cook till the raw smell leave sand the egg is completely cooked. Mix everything together and cook in a low flame for another min and then switch off the flame.

    ยท Garnish with coriander leaves for a nice flavour.
    ยท Can be served along with roti or rice.
    ยท Goatโ€™s brain gets cooked really soon so donโ€™t cook for a longer time.

    Chettinadu Mushroom Gravy | chettinad mushroom kulambu | Chettinad mushroom curry with step by step pictures. Chettinad dishes and exploring the Chettinad cuisine has become my recent favorite and tried few basic dishes with Chicken, Prawn, and kuzhi paniyaram and without any doubt, it became a hit at home and the flavor from the freshly ground masala is delectable.

    This spicy Chettinad mushroom gravy goes very well with Roti, Poori, or Dosa. You make also make the Chettinad mushroom dry instead of the gravy version. Adjust the consistency of the gravy as you prefer. Chettinad Mushroom biryani is another favorite recipe of mine. However, I have also tried a simple Mushroom biryani earlier. Check the recipe if interested.

    The Mushroom masala is made of super flavorful Chettinade whole spices. It has a little handwork and effort in the gravy but the end result is so satisfying.
    I usually make these elaborate mushroom Chettinad curry for the weekend. A brunch or dinner is perfect with the curry and some Set dosa or roti.

    Recipe Instructions

     
        1.    Dry roast the ingredients mentioned under โ€œTo Roast and Grind till you get a nice aromaโ€ and blend it to a fine powder.

    2.    Also blend the ginger, garlic and curry leaves and set aside. Heat a pan with oil once its hot add fennel seeds let it sizzle and then add Bay Leaf,Green Chilli and Curry leaves.

    3.    Next add in the onions and saute till glossy and then add in the ginger garlic and green chilli paste and saute.

    4.    Once the raw smell leaves and in the chopped tomato and cook till it leaves oil. Next add the salt and ground masala powder. Mix well.

    5.    Add the chopped mushroom and mix well. It will start leaving water and cook.

    6.    Now add the required water and bring it to gravy consistency. Mix well and cook in a low flame for 5 mins. Finally garnish with coriander leaves and switch off the flame.
