    Curry Leaves has numerous health benefits, it is very good for hair indeed. We always use curry leaves as a flavoring ingredient in our food. Nevertheless we tend to throw or set it aside in our plate. How about making a powder and had along with our daily dose of rice. Indeed Curry leaves powder along with a dash of ghee and white Rice makes an awesome combo.

    Few weeks back when I was ordering vegetables in big basket I clicked on Curry leaves twice and I dint notice that, so in spite of that ended up having ½ kg of Curry Leaves which is too much to store.
    Now let’s get see how to prepare curry Leaves powder.

    Curry Leaves Powder

    Prep Time: 30 mins | Cook Time :15 mins |Makes: 1 box |Author :Sharmila
    Ingredients:
    Curry Leaves - 2 cups
    Urad Dal - 1 cup
    Dry Red Chilli - 20
    Grated Coconut - ¼ cup
    Hing / Asefoetida - ½ tsp
    Salt as needed
    Step by step Method with pictures:
    1. Wash the curry leaves really well and allow it to dry it down completely.
    2. In a pan dry roast the urad dal until golden brown and then set it aside to cool down.
    3. Next dry roast the Red chillies until dark and the remove it to a plate to cool down.
    4. Dry roast the freshly grated coconut until a nice aroma comes and the it turn golden brown and the set it aside to cool down
    5. Finally dry roast the curry leaves until crisp and allow it to cool down completely.
    6. In a blender add in the Curry leaves, Dry Red Chilli, Coconut and required salt and blend it to a coarse powder.
    7. Next add in the Urad Dal and then blend everything to a fine powder. Allow it to cool down and then store in an air tight container.
    Notes:
    • Tastes good with white Rice and a dash of Ghee.
    • Using Curry Leaves powder, curry leaves rice can be made. By adding ghee and then temper the same and finally add curry powder give a good mix and then add in the rice and give a good mix.
    • Store the curry leaves powder in a fridge as we have added coconut to it.

    Last week instead of the usual super Market shopping hubby took me to a local Market nearby our house. Was totally amazed by the fresh products and stuffs. So when I saw this ready-made idiyappam I picked some as it would come handy for breakfast. So the next day itself I cooked it for breakfast and served it along with coconut milk ,Have shared a pic on my Instagram the same day morning ,So the next day hubby asked me for a Spicier versions and hence I tried this Egg Kothu sevai ,though I couldn’t eat due to my Easter Fasting ,Hubby enjoyed it totally .Happy me J

    Ingredients

    Recipe Instructions:

    1. Heat a pan and add in oil once it heats up add in the ingredients under To Temper table one by one.

    Now add in the chopped onions and sauté until glossy.   

    2. Next add in Ginger garlic paste cook until the raw smell leaves.

    then add in chopped tomatoes cook till it is fully done.  

    3. Now add in all the Masala powders. Chilli powder, Garam Masala, Turmeric powder and Salt give a good mix.

    Cook for a min and then move all the contents to one corner of a kadai and now break open the eggs and stir fry it, once eggs are cooked mix everything with the masala.   

     4. Finally add in the cooked Sevai and mix well.

    Garnish with Coriander leaves and switch off the flame.

    Serve hot with Raita or Yogurt with some lemon wedges.

    Standard 1 cup measures 240 ml

    Ingredients

    • 1 cup Cooked Sevai/Idiyappam
    • 1 Onion
    • 1 tsp Ginger Garlic paste
    • 1 Tomato
    • 1 tsp Chilli powder
    • ½ tsp Garam Masala
    • ¼ tsp Turmeric powder
    • Salt as needed
    • 3 Egg
    • Coriander leaves to garnish

    To Temper:

    • 1 tbsp Oil
    • 1 tsp Mustard Seeds
    • 1 tsp Urad Dal
    • 1 tsp Cumin Seeds/Jeera
    • 1 sprig Curry Leaves

    Instructions

    Lets start the day with this beautiful Gulkand Tea filled with freshness and fragrance.

     Gulkand is an Indian Ayurveda product, it mainly helps in cooling the body, and summer is here so why not add cooling agents to our daily Tea. This tea is so flavourful it has a hint of Rose flavour which is just an awesome way to start our day.

    Most of the Indian Ladies including me cannot start our day without a Tea in the morning. Additional awesomeness is that I used my homemade Gulkand to prepare this tea. Now let’s see how to prepare this yummy Tea.

    Gulkand Tea

    How to make Gulkand Tea

    1. In a Sauce Pan add in Milk and then add Gulkand.

    2. Next add Tea Powder and Sugar.

    3. Mix well and bring everything to a boil, Now simmer it for 5 mins .Add in Rose Water and the switch off the stove.

    4. Now strain the prepared tea and pour in serving glasses. Enjoy Gulkand Chai with any Cookies of your Choice on a Cool Evening.

    • In a Sauce Pan add in Milk ,Water and then add Gulkand
    • Next add Tea Powder and Sugar.

    Eggless Chocolate Brownies is a fudgy gooey perfect treat. It is just perfect for the chocolate cravings. It is pure chocolate heaven.

    Eggless Chocolate Brownies

    Eggless Chocolate Brownies is pure chocolate heaven. Making brownies is always a fun task for me in the home. However, this is the first time I am trying Eggless brownies and it turned out brilliant. I absolutely love it.

    I have been searching for various recipes of eggless brownies finally I found this recipe absolutely perfect and I tried it and got the expected result. Now let’s get started.

    Eggless Chocolate Brownies

    How to make Eggless Chocolate Brownies

    1. In a saucepan start melting the butter and once it is melted set aside. In a mixing bowl sift together all-purpose flour, Sugar, Salt, Baking powder, and Cocoa powder together.

    2. Mix the dry ingredients together to form a homogeneous mixture. Now along with the Melted butter add in the Yogurt and Vanilla essence.

     

    3. Whisk everything together evenly, the mixture may look curdled a little but that is absolutely ok. Slowly fold together the wet ingredients and dry ingredients together till they are mixed evenly without any lumps.

     

    4. Now add in the chocolate chips and mix everything together. Prepare a baking pan and line it with Parchment paper.

     

    5. Pour the brownie batter in the prepared baking pan. Preheat the oven at 180 Deg C for about 10 mins and then bake the brownies for in 180 Deg c for about 30 mins or a toothpick when inserted comes out clean.

     
    Serve these delicious eggless brownies with a scoop of ice cream.

    Hot Chocolate one warm cozy drink for the winter. It is made of Milk cocoa powder and chocolate. It definitely lits up the day.

    Hot Chocolate one of my favourite winter drink. When the whole world is busy celebrating Holi in our household we are busy shifting to Chennai, It’s been a tough and busy weekend so far. Me and hubby was too busy doing all the relocation work .In a short break I thought of treating us with an exotic drink ,and hence the Hot chocolate.

    Step by step Method with pictures:
    1. In a sauce pan add milk and start boiling, to this add in Fresh cream and whisk well then add in cocoa powder.
    2. Whisk well and then add in sugar, simmer for 2 mins and then add in Chocolate Shavings whisk well such that the chocolate is fully dissolved.
     

     3. Switch off the stove and then add in the Vanilla essence .Strain and then serve hot J

    Pomfret Fish Fry

    Pomfret fish fry is a delicious seafood appetizer. Fish is marinated with fresh spice powders and shallow fried until crisp and juicy.

    As we all know fishes are a very good source of Vitamins and essential fatty acids. It is advisable to consume fish once a week at least. Pomfret Fish is way healthy and delicious.

    How to make Pomfret Fish Fry

    1.Add all the ingredients mentioned under the To grind table to a blender.

    2.Add little water and blend to a fine paste.

    3. Clean the fish, Wash well and make slashes in the fish.

    4. Apply the ground masala over the fish and make sure it is evenly applied throughout the fish. Let the fish marinate for 2 hours. After margination heat a skillet with oil for shallow frying.

    5. Cook the fish on both sides until it is cooked fully. I used some curry leaves while frying for flavor. Serve hot.

    • 4 Dry Red Chilli
    • 1 tbsp Fried Gram Dal / Potukadalai
    • 4 Small Onions
    • ¼ tsp Turmeric powder
    • 1 sprig Curry Leaves
    • 1 tsp Pepper Corns
    • Salt as needed
    • 1 tbsp Water

    Instructions 

    • Add all the ingredients mentioned under the To grind table to a blender.
    • Add little water and blend to a fine paste.
    • Clean the fish, Wash well and make slashes in the fish.
    • Apply the ground masala over the fish and make sure it is evenly applied throughout the fish. Let the fish marinate for 2 hours. After margination heat a skillet with oil for shallow frying.
    • Cook the fish on both sides until it is cooked fully. I used some curry leaves while frying for flavor. Serve hot.

    Notes

    Garnish the fish with Lemon Wedges and serve.
    Don’t forget to make slashes and fry the fish as it will help to get the masala spread evenly over the fish.
    While flipping the fish do it with utmost care as the fish might tend to break.

    What is Holi

    Holi is a Spring festival celebrated across India, It is also called as Festival of Colours, It also indicates the Start of the Spring season after the Winter.

    People celebrate Holi by throwing colors and color waters. As a thumb rule in all Indian Festivals, food plays an important Role. Some of the Customary Holi foods are Bhang, Thandai, Gujiya, Milk Peda, and many more.

    Ingredients Thandai Powder

    Thandai Powder recipe is an instant nuts powder that we use in preparing Thandai which is a Holi special drink. It comes in handy for Thandai. Homemade Thandai powder is a perfect blend this season. It comes in handy for the festival days.

    Nuts & Seeds - We add Almonds, Cashew nuts, Pistachios are a proper portion for the homemade thandai masala recipe. Additionally we also add melon seeds.

    Fennel seeds - Adds an authentic and earthy aroma to the thandai mix.

    Black Pepper - Gives a nice tint of spiciness.

    Dried Rose Petals - This makes a rich addition to the masala blend. You can replace rose petals with gulkand too.

    Saffron - another important not to miss ingredient. Adds more richness to the thandai powder.

    How to prepare Thandai Powder

    Ingredients

    • ¼ cup Almonds / Badam
    • ¼ cup Cashew Nuts
    • 2 tbsp Pistachios
    • 1 tbsp Poppy Seeds
    • 15 Pepper Corns
    • 1 tbsp Fennel Seeds
    • Saffron few strands
    • 1 tbsp Rose Petals or Gulkand
    • 1 tbsp Melon Seeds

    Instructions 

    • In a blender add in all the ingredients, blend everything to a coarse powder.
    • Store and use it for making Thandai.

    Notes

    The ground masala can be stored in air-tight containers for up to months together.
    Boil milk and use the Thandai Masala mix and prepare it readily and easily. I dint have melon seeds handy, so I didn't use them.

    Sweet Corn Soup

    Sweet Corn Soup is a great option for a wholesome meal or dinner. The sweetness from the corn balance greatly with other veggies.

    Sweet Corn and Vegetable Soup

    Soup is a liquid food which is usually prepared by cooking vegetables or meat to form a broth. It can 
    be either clear soup or thick soups .Usually soups are had before food to increase the appetite. A cuppa hot soup topped with Salt and Pepper is an awesome food during a chilled winter evening.

    Coming to today’s Sweet Corn soup I have used a lot of veggies. I tried to made use of all the veggies I had in my kitchen .So feel free to use any veggies of your choice with Boiled Sweet Corn as the main ingredient.

    How to make sweet corn soup

    1. Take ¼ cup sweet corn in a blender and add in ¼ cup water, blend together to form a fine paste.

    2. Take a kadai /pan heat it and add in butter let it melt to this add in the remaining ¼ cup Sweetcorn ,Green Peas, Capsicum and Broccoli florets. Sauté everything for 2 mins in a low flame.
     

    3. Now add in 1 cup of water and also add in the ground sweet corn paste. Mix everything together and let it come to a boil.

     

    4. Meanwhile prepare the corn flour paste, Add in the Cornflour and Water in a small bowl and form a paste add it to the boiling soup.

     

    5. Simmer for a minute add in the sugar and pepper. Finally garnish with Spring onion florets and serve hot.

     
    This is such a healthy way to start the meal. It tastes so delicious and awesome.

    • ¼ cup Green Peas
    • ¼ cup Capsicum
    • ¼ cup Broccoli florets
    • 1 tbsp Butter

    • 1 tsp Vinegar /Lemon juice
    • Pepper as needed
    • 2 tbsp Spring onions

    Corn Flour paste

    • 2 tsp Corn flour
    • 3 tbsp Water

    Aubergine Roast (Egg Plant Roast)

    Aubergine Roast

    I always try to include at least a veggie a day in our Lunch, But whenever I am getting late for work or I have to prepare something in a hurry I just opt for Potato or Eggplant as the Roast is prepared with jut minimal ingredients and cooks so far. Chopping also don’t take much time as we have to just cube them roughly. Now let’s get started.  

    How to make Eggplant Roast

    Chop the Aubergine into cubes. Heat oil in a pan, once it heats up add in the Hing and cubed Aubergine.

    Toss it well after 2 mins add in the chilli powder and Salt.  

    Mix everything together and keep cooking in a low flame until done.

    Keep stirring in between else it will stick to the pan. Switch off the flame once done.

    Serve with steamed Rice and Rasam. Prefect for a Lunch Box.

    Pomegranate Sweet Corn Salad is a colorful salad with all things good. It makes a healthy option for a snack or dinner.

    One day I was just browsing back to the Recipe Index in my blog, I just realized that I dint share any Salads so far. I don’t know I never realized it. So sharing today a super yummy and colorful salad which absolutely suits my Blogging Marathon theme as well.

    If you are planning to go on a diet this will be apt for you as it had Pomegranate, Sweetcorn and any nuts of your choice no sugar indeed. One more addition detail is that it is a no cook recipe.

    I have also added few strands of Mint leaves which is so refreshing when added to a Salad, This is such a lovely way to start a day.

    How to prepare Pomegranate Sweetcorn Salad, Pictorial

    1. In a bowl add in the Pomegranate, Sweet Corn, Walnuts and Pistachios.

     2. Toss everything once then add in finely chopped mint leaves, Lemon Juice and Honey. Mix everything well and serve immediately.

    Healthy and colourful Salad is now ready .Serve it as an anytime Snack.
