    What is Ragi

    Ragi which is also known as finger millet is a cereal that is widely seen in African and Asian countries.
    It has high cooling properties and is rich in fiber and hence it keeps us full for a longer time. Finger Millet is an age-old crop.
    It is also known as Finger Millet in English. Ragi in Kannada, Telugu and Hindi. It is kezhvaragu in Tamil.

    What is Ambli

    Ambli is a summer drink or porridge which is very popular in the state of Karnataka, India. The drink with prepared with Ragi Flour usually. It is then cooked along with water and finally, we add beaten buttermilk. It is good for keeping our body cool during the hot summer.

    How to make easy Buttermilk

    Buttermilk is very good for summer. We can prepare it easily by adding water in Curd or Yogurt and bringing it to a thinner consistency. Beat well to avoid if any lumps.

    You can also prepare by adding Lemon or Vinegar to milk and curdling it.

    Yet I always prefer the first method. I find it easy and quick.

    Ragi with Buttermilk

    Ragi takes time to digest and we usually recommend avoiding heavy food in the winter. However, in summer, it is highly recommended to cool down the body.

    Ragi or Finger millet along with Buttermilk is just perfect both have cooling properties. It helps in keeping the body hydrated and we also dilute and cook the ragi which makes it a perfect summer food.

    Ragi malt recipe with buttermilk

    Malt is a drink that is usually prepared with any cereal. The sweeter version of Ragi malt is also very popular and I love to have it as a breakfast. It keeps the tummy full for a longer hour.

    Ragi Malt with buttermilk is again a healthy drink. This is also as popular as the sweetened version.

    It has various health benefits. Ragi has high fiber content and rich in calcium. It also helps in blood purification.

    How to Prepare Ragi Butter Milk ,Pictorial

    1.    In a saucepan add in ¾ cup of water, to this add in ¼ cup of ragi flour. Mix well.

    2.    Mix such  that the flour is completely dissolved, and no lumps remain. Now switch on the stove and keep cooking in a low flame.

    3.    The mix will get thick and glossy. Keep stirring continuously to avoid lumps. Once it's thick and the color changes, Switch off the flame. Allow it to cool down and then add in 1.5 cups of buttermilk. Add 1 cup of water if you prefer it to be thinner.

    4.    Mix well so that the ragi and buttermilk blend completely without any lumps. Next, add in the required salt.

    5.    Mix well and set aside. Heat a pan with oil once it's hot add in the Mustard seeds let it splutter.

    6.    Next add in the cumin seeds and hing/ Asafoetida. Pour the tadka over the prepared buttermilk and mix well. Garnish with few curry leaves and serve.

    Makes a healthy and filling drink.

    Standard 1 cup measures 240 ml

    Ingredients

    • ¾ cup Water
    • ¼ cup Ragi Flour
    • 1½ cup Buttermilk
    • 1 cup Water Optional
    • Salt as needed
    • 1 tsp Oil
    • ¼ tsp Mustard Seeds
    • ¼ tsp Cumin Seeds
    • Hing / Asafoetida a generous pinch
    • 3 or 4 Curry Leaves

    Instructions 

    • In a saucepan add in ¾ cup of water, to this add in ¼ cup of ragi flour. Mix well.

    • Mix well and set aside. Heat a pan with oil once its hot add in the Mustard seeds let it splutter.
    • Next add in the cumin seeds and hing/ Asafoetida. Pour the tadka over the prepared butter milk and mix well. Garnish with few curry leaves and serve.

    Jackfruit chips is a famous snack in Kerala. It is prepared from raw jackfruit. It is sliced into pieces and deep fried until its crisp. It is one of the perfect evening snack to serve along with hot chai.

    About Jack Fruit Chips

    Jackfruit chips is a famous snack in Kerala. Whenever the jackfruits are in season we usually make a bulk and store and it sure makes our evenings more delightful. A cup of chai with some chips is like a perfect treat.

    They are also known as Chakka Vathal or Chakka Chips or Chakka Varuthathu or Chakka Upperi in different regions of kerala.

    How to choose Jackfruit for Chips

    One important point in making the chips is choosing the right jackfruit. It needs to be raw and even if its slightly ripe the chips might not turn crispy.

    So don’t forget to check the notes section of the recipe, where I have mentioned how to prepare the chips even with slightly jackfruits and may more

    How to make Jackfruit Chips

    1.    Remove the seed from the jackfruit. 

      2 .And then slice the Jack fruit into thin strips.

     2.    Heat a heavy bottomed Kadai with oil for deep frying.Once its hot enough for frying. Check by dropping a small piece if it comes up the oil heat is perfect to fry.

     4.    Drop the sliced jackfruit in small batches and deep fry keep the flame in high for 2 mins , bubbles will be there in the oil immediately after dropping the jack fruits. Slowly it subsides. Continue to fry.

     5.    After 2 mins keep the flame in medium high and fry till its crisp.

     6.    Strain in paper tissue. Once its cooled down. Mix with the spices. In a big vessel add the salt, turmeric powder and pepper powder. 

     7.Give a good mix and then add the fried jackfruit chops and toss well so that the spices are coated over the chips. Now remove from the vessel and store them in airtight containers.

    Makes a nice evening snack with some Chai.

    Notes

    • Only raw jackfruit works for the chips, if its slightly ripe also the chips will not turn crisp ,it might be soggy .
    • In that case sun dry the sliced jackfruit for a day or 8 hours in hot sun.
    • Check if the jackfruit is dried well without any moisture and then you can fry to get crispy chips.
    • If nor sun drying, you can double fry the chips to make it crispy.
    • I have used pepper powder in this recipe as it is good for the kids, you can also you chilli powder or can also be skipped .
    • Usually salt and turmeric powder is mixed well with water and sprinkled in hot oil while deep frying ,but its not safe as the oil might splash or burst ,so I always add spices after frying ,There is no compromise in taste it tastes equally good.

    Ginger thogayal or Chutney is a spicy accompaniment. It is slightly high on the spice levels. Goes well with any mild stews.

Be it breakfast, Lunch dinner we tend to make chutney as an accomplishment in one or the other way. Infact the taste of the chutneys are in our taste buds and our food is well adapted towards it. Sharing today one such thogayal which can be used in our menu. Now lets see how to prepare Ginger thogayal.

    Ginger Thogayal

    Ginger is good for digestion, and hence it is widely included in Indian food. This thogayal is a very famous dish in SOuth Tamil Nadu. In Tirunelveli especially they serve it to rice along with Sodhi Kuzhambu. Sodhi is a mils coconut milk-based Stew. Both are like a match made.

    How to prepare Ginger Thogayal, Pictorial:

    1.    Heat a pan with 2 tsp of oil, once its hot add in the urad dal and roast until golden and set aside. 

     2.    In a the same pan add in the remining 2 tsp of oil and once its hot add in the chopped 1 cup of ginger. Saute in a medium flame until its slightly golden. Next add in the sliced small onions and saute till is soft and glossy.

     3.    Next add in the dry red chilli, Roast in a low flame for 2 mins.

    4.    Next add in the tamarind and 2 springs of curry leaves. Sauté in a medium flame for a min. Switch off the flame.

    5.    Now add in the grated coconut and mix well. Let it cool down and then grind the thogayal by adding little water and the required Salt. Ginger thogayal is now ready to be served.

    Serve it with rice or even idli ,Dosa.

    How to store Ginger Thogayal

    Since the thogayal has coconut added we cannot store it outside the refrigerator. You can freeze it for up to 3 weeks .

    Ice Apple Badam Milk Recipe | Nungu Badam Paal |Palm Fruit Badam Milk with step by step pictures and video. Palm Fruit / Nungu is a yummy summer delicacy. It is so cooling and perfect for the hot summer. So before the season ends I wanted to post some delicious Nungu recipes. So now let's see how to prepare nungu Badam Milk.

    How to make Nungu Badam Milk

    1.    Soak the Almonds in hot water and set aside for 1 hour. After 1 hour, peel the skin of the Almonds and set aside.
     

    2.    In a blender add in the peeled Almonds, a small pinch of saffron, 2 tbsp of Milk.

    3.    Also add in 1 tbsp of Nungu / Ice Apple. Blend it to a fine puree and set aside. In another bowl add in 1 tbsp of milk and add a pinch of saffron and set aside.

    4.    In a saucepan add in 2.5 cups of water ad bring it to a boil. Once it comes to a boil. Put it in a low flame and mix well. Keep cooking till the milk becomes slight creamy for almost 15 mins.

    5.    Add in the Sugar or Jaggery powder, the ground badam ice apple paste and saffron milk.

    6.    Mix everything together. Cook for 2 mins and switch off. Allow it to cool down completely or refrigerate till use. Take a serving glass. To this adding 3 tbsp of Nungu Ice apple.

    7.    Next add in the Badam Milk, Top it with few saffron stands .

    8.  Top it with Almond Slice and It is ready. Serve chilled.

    Serve Chilled in the hot summer.

    • 4 Ice Apple / Nungu / Palm Fruit
    • 15 Almonds
    • Saffron a generous pinch

    • 3 tbsp Jaggery powder or Sugar

    • Ice Apple gives a very chilling effect in hot summer, so its perfect for this season.
    • Nungu/ Palm Fruit if not found you can use badam pisin / Almond gum or can be left as such.

    Ingredients

    • 2 cups Banana flower
    • Oil for deep frying

    To Grind:

    • ½ cup Roasted Gram Dal
    • 1 tsp Fennel seeds
    • 1 tbsp Poppy seeds
    • 2 Cardamom
    • 2 Cloves
    • 1 inch piece Cinnamon Stick
    • 10 Cashew nuts
    • 2 springs Curry Leaves
    • 1 inch piece Ginger
    • 5 Garlic
    • 1 Onion
    • ½ cup Grated coconut
    • 1 tsp Red Chilli powder
    • 1 tbsp Coriander powder
    • Salt to taste
    • 1 Green Chilli
    • 2 tbsp Coriander leaves

    Instructions 

    • Clean the banana flowers and then chop them into small pieces. Put them in the buttermilk till used.
    • Add the roasted gram dal in a blender and grind it to fine powder.
    • In the blender add in the fennel seeds, Poppy seeds, cardamom, Cloves, Cinnamon Stick ,Cashew nuts.
    • Next add in the curry leaves, ginger and garlic pods. Add in the chopped onion. Next add in the red chilli powder, Coriander powder, Salt, Green Chilli and Coriander leaves.
    • Blend everything. Next add in the chopped banana flowers and blend everything to a fine puree.
    • Transfer it to a big plate. Add the roasted gram dal powder little by little and knead to a fine dough.
    • Oil the palms and then knead the small kola urundais. Put in the fridge for a hour.
    • Heat oil in a pan for deep frying. Once its hot add in the kola urundai 4 to 5 at a time and deep fry.
    • Fry in a medium flame. Dont disturb it for the first 2 mins and then flip and cook on all the sides.
    • Drain in paper towels and serve hot.
    • In case you don’t want to deep fry , you can cook the same in appe / paniyaram pan. Check my video for more details.

    • You can also use the same recipe for raw banana.
    • Make sure the banana blossom is not bitter , and keep soaking in buttermilk till you use.
    • Drain the buttermilk well and then blend.
    • If the water content is more the kola uruandai will not come perfectly. You can add more roasted gram dal powder or put in fridge to bring the kola urundai firm.
    • You can freeze the kola urundai for a week and deep fry when ever needed.

    Ingredients

    How to make Jaggery Chocolate Cookies

    1.    In a mixing bowl add in the soft butter and Jaggery powder.

     2.    Cream them together until the butter and Jaggery are well combined.Next add in the Cocoa powder, Baking powder. Combine it once again with the butter and Jaggery powder.

     3.    Next add in the Wheat flour in small batches and knead everything to a soft dough. 

     4. If the mixture is very dry sprinkle in Water and Knead.Pinch a small portion of the dough and flatten it with a rolling pin.

     5.    Sprinkle in some Chocolate Chips and nuts if using and run the rolling pin above the same once again.

     6.    Using a cookies cutter cut the cookies. Let the cookies be of 1 to ½ inch thickness. Put it in the fridge for 30 mins. Preheat a oven at 180 Deg C for 10 mins and then bake the cookies at 180 Deg for 10 mins.

    7.    Allow it to cool down complete and then store in airtight container.

    Stays good for more than 2 weeks. Store in air tight containers for longer shelf life.

    Cucumber Lassi Recipe | Cucumber Mint Cooler with step by step pictures and a video. Cucumber is a perfect vegetable to have in the summer. It is high in water content, and it is so good to keep the body hydrated this summer. So do try out this yummy Summer drink.

    Ingredients

    Cucumber - Use fresh English cucumber. No need to remove skin or seeds in that case. It tastes good. If using other varieties you may remove the cucumber seeds and blend the lassi.

    Mint, Curry Leaves - Gives a yummy refreshing flavor to the lassi.

    Cumin Powder - Enhances the taste also aids in digestion and hence important ingredient.

    Salt - Use Pink salt or regular one.

    Yogurt - Use thick and flavorless curd or yogurt for a creamy lassi.

    Water - Use chilled water or normal water along with some ice cubes for a chilled lassi.

    Summer is here and this is the perfect time for Juices. I like to try a variety of them with different fruits or vegetables. One thing I am particular about is not consuming too much sugar in this process.

    Today I am using fruits with natural sweetness and then if needed mostly use honey or Jaggery Powder. Now let's see how to prepare Pomegranate Beetroot Juice.

    Beetroot and pomegranate juice benefits

    Both beetroot and pomegranate help with the blood pressure and cardiovascular system of our body. Beetroot is a very good source of fiber and pomegranate is rich in antioxidants and minerals. Also, they both help in maintaining a good nitric oxide level in the body and better stamina.

    Both beetroot and pomegranate are also good for the skin. Having this juice daily helps in increasing the skin glow as well.

    Ingredients

    Beetroot - Use fresh beetroot. Peel the skin and then juice them in the juice.

    Pomegranate - Use good and sweet pomegranate. You may remove the arils and then use them.

    Ginger - It is good for digestion and helps in removing the muddy odor of beets in the juice

    Jaggery powder - This is optional and you may skip too. Or you can use honey or maple syrup.

    Water - Use chilled or normal water as you prefer for the juice.

    Dietary Specification:

    Pomegranate and beetroot juice are naturally vegan and gluten-free. You may make them sugar-free by skipping the jaggery powder.

    Instead of jaggery, you may use maple syrup or honey too. Or skip the sweeteners totally if the sweetness from the beetroot and Pomegranate are sufficient.

    If using honey the juice is not vegan.

    1.In a blender add in 1 cup pomegranate arils and 3 tbsp of beetroot chunks.

     2.Next add in the Ginger piece and Jaggery powder. Blend everything until creamy by adding ½ cup of Water.

    3.Strain the Juice to remove the discards and serve.

    Healthy Summer Cooler is now ready to serve. Serve Chilled with Ice Cubes.

    Tips & Variations

    • You may also add some sabja seeds or chia seeds to the juice. Gives a beautiful texture and is good for health.
    • Beetroot pomegranate juice benefits are not only limited to the skin but to the entire system and hence recommend to take at least 4 times a week.
    • To make your own pomegranate juice easily, during your meal prep you can peel the pomegranate arils and store them in zip locks. It helps and speeds up the juicing process.
    • You may also try beet grapefruit juice or even beet carrot juice too.
