    Standard 1 cup measures 240 ml

    Ingredients

    • 3 tbsp Rolled Oats
    • 1 tbsp Chia Seeds
    • ½ cup Milk
    • 1 tbsp Caramel Sauce
    • ¼ cup Mango pieces

    Instructions 

    • In a bowl add in the Rolled Oats, Chia Seeds and Milk. Refrigerate overnight.
    • In the morning take it from the fridge and mix well. Next add in the Caramel Sauce.
    • Mix well and then add in the chopped Mango Pieces and serve immediately.

    Notes

    • Serve chilled.
    • You can also use mixed nuts and flax seeds along with this.
    • Caramel Sauce can also be replace with chocolate sauce.

    Ragi malt is a healthy porridge prepared with Ragi powder. It can be prepared in a less time and can be had even for breakfast. This is a sweet version with milk and more added nuts. Ragi which is rich in fiber keeps us full for a longer time and ideal.

    Ragi Malt Recipe | Healthy Ragi Porridge Recipe | How to prepare Ragi Malt | FingerMillet Porridge. FingerMillet is a powerful millet, it is very rich in nutrients and aids in weight loss. You may prepare Ragi malt in a very little time and can be had even for breakfast. It is so filling. Ragi malt is also a toddler-friendly food. The aroma of cardamom makes it more flavourful.

    You can use either Palm Jaggery or Jaggery as the sweetener. Adjust it as per your taste preference.

    What is Ragi Malt:

    Ragi Malt is a traditional beverage prepared with Ragi Flour, Water, and Milk. It is usually flavored with cardamom and sweetened with any Palm Sugar.

    It is rich in fiber and wholesome. The Malt is filling and nutritious too. Indeed one can have this daily or even alternate days.

    Ragi malt ingredients

    Ragi Flour - Use sprouted ragi flour or the regular ones.

    Water - We dissolve the ragi flour in water and then bring them to the porridge consistency.

    Milk - Gives a creamy texture to the milk.

    Jaggery - Use powdered organic Jaggery. Organic Jaggery will be impurity or dirt free and hence it's safe and easy to use in ragi milk. If using normal Jaggery, you may have to melt them in water. Strain and remove the impurities and then use them.

    Cardamom Powder - Gives a heavenly flavor to the ragi malt. If using the whole cardamom you may crush and then use.

    Nuts - Use any nuts of your choice to garnish the ragi malt. My personal favorite is crushed Almond and Pistachios.

    FAQ's

    Difference between ragi Malt and ragi ambli ?

    Ragi malt is a sweet version and ragi ambli is a savory version. In Ragi Ambi instead of milk and Jaggery powder, we add buttermilk and salt. Cook the ragi powder with water and then cool down. Once cool down add buttermilk required salt. You can also add in green chili, onion, and a few curry leaves.

    How to prepare Ragi flour?

    Dry roast the finger millet until it slightly changes in color. Allow it to cool down and then grind to a fine powder. Let it cool and then sieve and store. Use as and when needed for preparing any porridge or malt.
    You may use sprouted ragi to prepare sprouted ragi powder.

    Instant Ragi Malt Powder

    Mix ragi flour, Palm sugar or Jagger powder, and cardamom powder and store. You may use this as an instant ragi malt drink powder. You may just cook the powder with water and then add milk for a quick ragi drink.

    FingerMillet Porridge

    How to make Ragi Malt

    1.    In a vessel add 2 tbsp of Ragi powder to this add-in ½ cup of water mix well without any lumps.

    2.    In a saucepan add in the ragi mixture, next add in 1 ½ cups of water and mix well. Let it cook in a medium flame for 15 mins or till it becomes slightly thick.

    3.    At this stage add in the Palm Jaggery and Cardamom, Mix well.

    4.    Next add in the Milk cook for another 5 mins on a low flame and switch off. Garnish with some nuts and serve.

    I like my Malt when its mildly hot and garnished with nuts.

    Tips & Variations

    • Use Buttermilk and salt instead of Milk and Jaggery for a savory version of the ragi drink.
    • For a vegan version of the ragi recipe, you may use coconut Milk or Almond Milk. Both tastes are equally good.
    • It is a perfect drink for weight watchers and makes a perfect ragi malt recipe for weight loss.
    • Ragi Malt benefits - Good for digestion, diabetes, good for hair, and many more.
    • This ragi porridge or ragi ganji recipe makes a wholesome breakfast along with a few cut fruits or Nuts.

    Serving Suggestions:

    If serving for breakfast serve the Malt along with Nuts and cut fruits. If serving as a snack it goes very well on its own.

    • 2.5 tbsp Jaggery Powder
    • 2 Cardamom pods or ½ tsp Cardamom powder

    Broad Beans Stir Fry Recipe

    How to make Avarakkai Poriyal

       1.    Heat a pan with oil, once its hot add in the mustard seeds let it splutter and then add in the Cumin seeds ,Urad Dal, Next add in the curry leaves and then onion .Saute till the onions turn glossy.

     2.    Slice the broad beans lengthwise and keep it ready. Once the onions are cooked add in the broad beans.

      3.    Saute for few mins in a low flame and then add in the turmeric powder, Chilli   powder and required Salt.

     4.    Finally add in the Cumin seeds powder if using and mix well. Cook for a mins and then add n the water.

     5.    Mix well and then cover cook in a low flame until the broad beans in fully cooked.

     6.    Finally garnish with grated coconut and switch off the flame. Mix well and serve hot with Rice.

    Serve hot with Rice or Roti.

    • ⅓ cup Grated Coconut

    Broccoli Potato Soup

    Broccoli Potato Soup is a healthy and filling soup together. Broccoli and Potato give a yummy combination when added to the soup. Absolutely guilt-free and 100 % plant based.

    Cold Winter days are back and it is the time of the year when we make a lot of Soups. Some Warm Soup along with a Soup stick makes a perfect winter day dinner for me.

    I am not a soup person, but when I make I enjoy it thoroughly. I like creamier soups topped with croutons. The croutons give a nice crunch and I make sure I add quite a lot!!

    This dump and go broccoli potato soup is super creamy and 100 % plant-based. A tasty low-calorie meal that makes you full and leaves satisfaction after every serving.
    If you are looking for a simple and quick soup then this is for you.. All you have to do is dump the ingredients in your Instant Pot or Pressure cooker and it does the job. Very less prep work and it is absolutely a wholesome meal.

    Broccoli Potato Soup

    Broccoli and Potato give a yummy combination when added to the soup. The volume of the soup will be less with only Broccoli. For this reason, we add potatoes. It gives a healthy and filling soup together. For a richer version garnish the soup with cheese as you like.

    One-Pot Broccoli Soup

    We can never have an easier version of the soup. This soup is as simple as that, All you need is to dump in all the ingredients into Instant Pot or Cooker and pressure cook, and then blend. Most delicious soup is ready in less time.

    Ingredients

    Broccoli - Add fresh green broccoli florets to the soup.

    Potato - Potato adds a nice volume to the soup. Also a yummy

    Onion - I am using red onions for the soup. However, white also goes well.

    Garlic - Just a few garlic pods for an added flavor.

    Salt & Pepper - Just the basic garnishings for the soup. Add Freshly ground pepper for extra flavor in the soup.

    How to make Broccoli Potato Soup

    1.    Wash the broccoli florets once and then add them to the inner pot of an Instant Pot, along with this add-in 1 potato cubed and 1 onion cubed and GarlicPods.

    Next, add 1 cup of water.

    2. Close the Instant Pot and turn in the pressure valve to the sealing position. Switch on and select the Pressure Cook mode. Set 3 mins in high pressure. Wait for a Natural Release and then open the Instant Pot. 

    Blend everything using an immersion blender or transfer everything to a normal blender and blend. I left few chunks of veggies as it is. Blend as per your wish.

    Switch on the Instant Pot back in the saute mode. Add in Salt and Pepper and let it cook for 3 mins and then switch off. Serve hot with toasted bread.

    • The soup is a no cheese, no cream version. Perfect for a vegan and gluten-free meals as well.
    • Feel free to customize as per your preference. Cream or Milk can also be added if you like it that way.
    • broccoli cheese soup - Add in parmesan cheese or Cheddar for a more creamy broccoli soup.
    • creamy vegan broccoli Soup - You can add in coconut cream or a full fat coconut milk.

    Serving Suggestions:

    Goes well with Breadsticks or Toasted Bread. A warm salad soup and croutons also make a perfect dinner

    Storage Suggestions

    Vegan broccoli soup is more freezer-friendly we don't add any dairy products and it stays well in the fridge for a week. Or you can freeze it for up to 6 months.

    Standard 1 cup measures 240 ml

    Equipment

    • Instant Pot
    • Blender
    • Instant Pot
    • Blender

    Ingredients

    • 1.5 cup Broccoli
    • 1 Potato medium sized
    • 1 Onion
    • 5 pods Garlic
    • 1 cup Water
    • Salt as needed
    • Pepper powder as needed

    Instructions 

    • Wash the broccoli florets once and then add them to an Instant Pot, along with this add-in 1 potato cubed and 1 onion cubed and GarlicPods
    • Next, add 1 cup of water.
    • Close the Instant Pot and turn in the pressure valve to the sealing position. Switch on and select the Pressure Cook mode. Set 3 mins in high pressure.
    • Wait for a Natural Release and then open the Instant Pot.
    • Blend everything using an immersion blender or a normal blender.
    • Switch on the Instant Pot back in the saute mode.
    • Add in Salt and Pepper and let it cook for 3 mins and then switch off. Serve hot with toasted bread.

    · Serve hot, top with some fresh cream if you wish.
    · Goes well with some sandwich or garlic bread.

Jackfruit ice cream recipe has been in my mind in quite a some time now , We have tasted Jackfruit Ice creams in Naturals and Baskin Robins ,since then hubby was asking me to try this ice cream at home ,But then every time we get Jack fruit we get to eat the fruits and I couldn’t any recipes. But this time I was so desperate about trying this ice cream and finally did, and I did face a tough time clicking it due to the scorching sun. So now lets see how to prepare easy and Yummy  Ice cream in home.

    The ice cream is so delicious with the chunks of jackfruit in every bite and it is creamy and yummy just like the store bough ice creams. When you have the jackfruits in season don’t miss out this yummy ice cream.

    As you all know summer will be the jackfruit season there is are more reasons to try out this yummy icecream.

    For this summer I have few more ice cream recipes coming up . Also check this easy recipes of Basic Vanilla Ice cream ,Custard powder Ice cream, PistaIce cream too.

       Step by step Method with pictures: 
        1.    Take the fresh cream in a bowl, beat well for 2 mins until its soft and creamy, Next add in the condensed milk.

     2.    Beat again for 1 more min. Take at least 15 Jackfruit arils and blend it to a fine puree.

      3.    Add the jackfruit puree to the beaten ice cream base. Fold gently with a spatula. Next add in the food colour if using.

     4.    Chop the remaining jack fruit arils into small pieces and add it to the ice cream base. Fold everything gently until its evenly mixed. Pour this to a freezer safe container and freeze for 8 hours or overnight. Scoop and serve immediately.

     Serve Chilled.

    • ¾ cup Condensed Milk
    • 20 Jackfruit Arils
    • Food Colour a pinch Optional

    Instructions 

    • Take the fresh cream in a bowl, beat well for 2 mins until its soft and creamy, Next add in the condensed milk.

    Jackfruit Appam Recipe | Instant Chakka Appam | Jackfruit Uniappam  with Step by step pictures. Jackfruit uniappam is one quick snack made during the jackfruit snack. Since its summer and we get juicy jackfruits it’s the best time of the year to enjoy jackfruit snacks.

    I have also another version of Jackfruit appam ,but this is an instant version and can be made in less than 20 mins from start to finish. Now lets see how to prepare Jackfruit Uniappam.

    Instant Sweet Paniyaram Recipe

    Sweet Paniyaram or Sweet Kuzhi paniyaram is a soft easy to prepare a quick snack. It prepared with wheat flour or rice flour. Sometimes fruits like Jackfruit or Banana are also used. It is either deep fried or made in a Paniyaram pan ( a special vessel with many small cavities). It is usually prepared on a festival day, or simply as an evening snack.

    For the instant version usually, use rice flour or Wheat flour and no soaking time is there. We mix evening and prepare the paniyaram. In the traditional version, raw rice is soaked and then ground to get the paniyaram batter.

    Sweet Paniyaram with Rice Flour

    Rather than soaking the raw rice and grinding the flour in the instant version, we can also use the rice flour. Like wheat flour rice flour also works well for paniyaram.

    But while using rice flour I make use of the paniyaram pan rather than deep frying the paniyaram.

    How to prepare Instant Jackfruit Paniyaram

     
     1.Remove the seeds from the jackfruits. Chop them roughly and then add it to a blender.

    2.To the blender add in the cardamom pods and the Jaggery. Blend well to a fine puree without adding water.

    3.To the puree add in the Salt ,Cooking soda and Dry Ginger powder mix well. Next add in the wheat flour in batches and mix well to form a loose dough.

     4.The dough consistency should be such that it should be non sticky and dip your hands in water and try to pinch a small ball it should come easily without sticking. If you feel the dough is sticky you can add in more wheat flour and mix well. Heat oil for deep frying.

    5.Once the oil is hot ,pinch in small portions of the dough and deep fry in a medium flame until its fully cooked and golden brown .Once its cooked remove from the oil and drain in paper towel serve hot.

    Serve as an evening snack as it can be made instantly in less time.

    • 15 arils Jackfruit
    • ½ cup Jaggery
    • 1 cup Wheat Flour
    • 1 tsp Cardamom powder

    Homemade Butter Recipe | How to make Butter in home with Step by step pictures. Butter is one staple thing in my fridge, I use it in a variety of dishes. We can use it for Curries or Gravies, If you bake very frequently this is like mandatory ,now lets see how to prepare butter in home with just the malai collected from milk.

    Step by step Method with pictures: 
         1.    Collect the malai from the milk daily and store in the fridge .When it reaches a good quantity. Get ready with the malai to prepare homemade ghee.

    2.    Take the collected malai in a blender and blend it. Slowly the malai starts to leaves the excess water and becomes a thick mass. Continue to blend for a interval of 30 secs and check once.

    3.    The thick mass formed is the butter and the liquid is the butter milk. At one stage the buttermilk and the butter separates completely.

    4.    Remove it from the blender at this time and transfer to a kitchen towel or muslin cloth. Now add the ice cubes at this stage and close the kitchen towel for a min. This will make the butter firm. Using the kitchen cloth separate the butter and buttermilk completely.

     The butter will be little watery so with the kitchen towel squeeze out the excess water complexly. This is the homemade butter and we can prepare ghee from this. The excess buttermilk can be used in gravies or even to knead the dough. Also it may taste sour so cannot be had directly.

    Little Millet Kheer is an easy and instant milk kheer prepared with Millets and it is flavored with cardamom and ghee.

I have already tried Little Millet Dal Kheer, and Kodo Millet Milk kheer . And now to end the Mega BM on a sweet note here is a humble and creamy Little Millet Kheer.

    How to make Little Millet Kheer

        1.    In a saucepan add in water, to this add in the washed Little Millets, and continue to cook till it's half cooked.

      2.    Next add in the 2cups of milk. Mix well and cook till the millets are completely cooked.

    3.    Now add in the sugar and the crushed cardamom pods and mix well

     4.    Allow it to simmer for another 5 mins. Finally heat ghee once its hot add in the cashew nuts are garnish till golden.

    5.    Add the ghee fried cashew nuts to the kheer along with the ghee. Serve hot.

    Serve hot.
