    Chow Chow Kootu

    Chow Chow Kootu is a protein-rich lunch side dish made of Chayote squash along with Yellow Split Lentils. Perfect to go with White Rice.

    Cooking with Chayote happened very rarely in my kitchen as hubby is not very fond of this veggies . But I wanted to include all vegetables at least once in a while in our food. So I picked one Chayote during the weekly shopping and I tried this kootu and I liked it .So now let’s see how to prepare chow chow kootu.

    How to make Chow Chow Kootu

        1.    Peel the skin of chow chow and chope them into cube sized pieces. In a pressure cooker add the chopped chow chow along with Moong Dal, Chilli powder, Turmeric powder and Salt.

    2.    Add 1 cup of water mix well and pressure cook for about 3 whistles. Wait till the pressure is released by its own and then open the cooker. Grind the ingredients mentioned in the “To Grind” section by add little water to a fine paste.Step 2 - Chow Chow Kootu Recipe | Chayote squash kootu

    3.    Add the ground coconut to the cooked chow chow and mix well.

    4.    Bring it to a boil after adding the ground coconut masala .Finally prepare the tadka with the ingredients mentioned under the “To Temper” section and switch off the flame.

    I served chow chow kootu with white Rice,Bitter gourd Chips, and Lady’s Finger Puli Kuzhambu.

    Standard 1 cup measures 240 ml

    Equipment

    • Pressure Cooker
    • Pressure Cooker

    Ingredients

    • 1 Chow chow
    • ¼ cup Moong Dal
    • 1 tsp Chilli powder
    • ¼ tsp Turmeric powder
    • Salt as needed

    To Grind :

    • ¼ cip Coconut
    • ½ tsp Cumin Seeds

    To Temper :

    • 2 tsp Coconut oil / any cooking oil
    • ½ tsp Mustard Seeds
    • 1 tsp Urad Dal
    • 2 Dry Red Chilli
    • 1 sprig Curry Leaves

    Instructions

    Ingredients:           

    To Marinate :
    Chicken – 500gm or ½ kg
    Red Chilli powder – 2 tsp
    Pepper powder – ½ tsp
    Turmeric powder – ¼ tsp
    Garam Masala Powder – 1 tsp
    Salt as needed
    Lemon Juice – 1 tbsp
    To Roast and Grind :
    Coriander Seeds – 1 ½ tbsp
    Dry Red Chilli- 4 nos
    Green Cardamom – 2 nos
    Cinnamon sticks – 1 inch piece
    Cumin Seeds – ¼ tsp
    Cloves – 4
    Whole Pepper – ¼ tsp
    Other Ingredients :
    Oil – 1 tbsp
    Onion – 2 big
    Tomato – 1 big
    Ginger garlic paste – 1 tbsp
    Thin Coconut milk – 1 cup
    Coriander leaves to garnish
    To Temper :
    Coconut oil – 2 tsp
    Mustard Seeds – ½ tsp
    Curry Leaves a spring
         Method : 
        1.    Clean and wash the chicken to this add in the ingredients mentioned under “To Marinate” section one by one.
         2.    Mix everything well and allow it to marinate for 2 hours.
        3.    Dry roast the ingredients mentioned under “To Roast and Grind Section” allow it to cool down and then grind it to a fine powder and set aside.
        4.    In a pan heat in oil once it heats up add in the sliced onions and cook till they become glossy.
         5.    Next add in the chopped tomatoes and cook till they are done and then add in ginger garlic paste and cook till the raw smell leaves.
        6.    Add the ground masala and cook for 2 mins and then add in marinated chicken .Cover and cook in a low flame for about 5 mins.
        7.    Next add in the thin coconut milk mix well and cook till the chicken is fully done. Add water if required.
       8.    Now prepare the tempering with the ingredients mentioned under “To Temper” section and pour to the chicken curry. Garnish with Coriander leaves and switch off the flame.
      Notes:
         ·       Serve hot with rice, Idli ,dosa or any Roti
         ·       Use coconut oil for preparing this curry don’t skip it.

    Bajra Dosa is a millet dosa prepared with whole bajra. It is so crispy with the texture of the dosa being similar to the rice dosa itself.

    Bajra Dosa | Kambu Dosa | Pearl Millet Dosa Recipe with step by step photo. Bajra is a wonder millet which is very healthy and it is used since very olden days. However the usage of millet has considerably decreased now a days.

    So I thought why would we use some healthy ingredients in our regular food and make it more healthy .So here is a healthy share of Bajra dosa. Now let’s get started

    Bajra Dosa | Kambu Dosa | Pearl  Millet Dosa

    How to prepare Bajra Dosa

        1.    Soak the Bajra, Urad Dal and Fenugreek seeds in water for about 4- 6 hours.

        2.    After soaking grind them to form a smooth paste in a blender or grinder similar to idli dosa batter. 
       3.    After grinding mix everything together to form a batter and allow it to ferment overnight or about 8 hours. 
      4.    Once it is fermented the batter is now ready for use. Mix salt and water as needed and bring it to the desired consistency. Heat a tawa and pour a ladle full of water. Sprinkle oil over the edges and allow it to cook fully.

     5.    Flip to the other side and cook till it is done. Serve hot with Sambar and Chutney.

    Whole Wheat Butter Cookies Recipe with step by step photos. It’s been a while ever since I baked something. After our Mega Baking Marathon in April, I started baking now only. Trying different varieties of cookies is something which I love a lot. We can include healthy ingredients and we get the satisfaction of giving quality food to the family.

    Today’s recipe is going to be a simple Whole Wheat butter cookie. It is perfect for tea time or after-school snacks along with tea or milk. I adapted the recipe from here. You can also replace Wheat flour with all-purpose flour. Now let’s see how to prepare Whole Wheat butter cookies.

    How to make Whole Wheat Butter Cookies

        1.    Sieve in Wheat flour twice or thrice and then to this add in powdered sugar, Baking powder, Soft butter and Cardamom powder.
    Step 1 - Whole Wheat Butter Cookies

    2.    Mix well with the finger tips the flour will resemble crumbs now. Now add in the required milk and bring the dough together.

    Step 2 - Whole Wheat Butter Cookies

     3.    Using a rolling pin roll the dough and cut the cookies into desired shape with a cookie cutter. Put them in fridge while you preheat the oven. Preheat the oven at 180 Deg C for about 10 mins and the bake for about 18-20 mins until the cookies are baked. It will be soft when they come out of the oven, will become crisp once they cool down.

    Microwave Mysore Pak Recipe | Instant Mysore Pak Recipe with step by step photos. Mysore pak is an Indian Sweet made with Besan Flour, Ghee and Sugar in equal proportions. It in one of the royal sweet which was first introduced to the Mysore Royal Family .Traditionally it is prepared in stove up and some muscle effort is required for continuous stirring .So I simplified this and made an instant version. This is so quick but there is no compromise in the taste and texture. I could get the same taste. So give a try J

    Microwave Mysore Pak Recipe

         Step by step Method with pictures: 
         1.    Take Ghee in a microwave safe bowl microwave it for 30 secs, so that the ghee melts, set it aside. In a microwave safe bowl take the besan flour to this add in a tbsp. of ghee.

    2.    Rub the flour and ghee with fingers so that it resembles crumbs .Next sift the flour and then dry roast the besan flour until a nice aroma comes and set the flour aside.

     3.    Take the powdered sugar in a microwave safe bowl and to this add in the melted ghee, mix well so that both are well combined.

     

     4.    To this add in the milk and mix well. Next add in the roasted besan flour.

     

     5.    Mix well so that no lumps remains. Grease a pan with ghee and set ready. Now microwave the flour in microwave high for about 1 min.

     

     6.    Microwave it for another 3 mins and after every 1 min mix well so that it don’t get burnt.

     

     7.    Finally microwave for 1 more min so that you get the caramelized and pours mysore pak and pour the mixture in the greased pan.

     

     8.    Shape it well and allow it to cool completely. And draw line once it is cooled remove them and store in air tight containers.

    • 1 cup Powdered Sugar
    • 1 tbsp Milk

    Instructions 

    • Take Ghee in a microwave safe bowl microwave it for 30 secs, so that the ghee melts, set it aside. In a microwave safe bowl take the besan flour to this add in a tbsp. of ghee.
    • Rub the flour and ghee with fingers so that it resembles crumbs .Next sift the flour and then dry roast the besan flour until a nice aroma comes and set the flour aside.
    • Take the powdered sugar in a microwave safe bowl and to this add in the melted ghee, mix well so that both are well combined.
    • To this add in the milk and mix well. Next add in the roasted besan flor.
    • Mix well so that no lumps remains. Grease a pan with ghee and set ready. Now microwave the flour in microwave high for about 1 min.
    • Microwave it for another 3 mins and after every 1 min mix well so that it don’t get burnt.
    • Finally microwave for 1 more min so that you get the caramelized and pours mysore pak and pour the mixture in the greased pan.
    • Shape it well and allow it to cool completely. And draw line once it is cooled remove them and store in air tight containers.

    Notes

    •  I totally microwaved the besan flour, Sugar and Ghee mixture for 5 mins to get the caramelized colour and porus Mysore pak.
    •  If you prefer soft Mysore pak, microwave only for 4 mins.
    •  Don’t microwave it for continuously I might burn the flour.
    •  Always use a big microwave safe bowl else the flour mixture might overflow while microwaving.

    Achu Muruku Recipe | Rose Cookies with step by step photos. Achu Muruku is a traditional recipe from the southern Tamil Nadu and Kerala. It is usually prepared during Weddings or Festivals to distribute among the friends and relatives. And hence it is prepared in bulk and then distributed. I clicked this during my brother’s wedding when we prepared to distribute to the relatives. So it was waiting for a long time in my draft and now it’s the right time to post. So this Diwali prepare this delicious achu murku and celebrate the festival of lights.

    We usually need special moulds to prepare this Achu Muruku. It is widely available in Kerala or Southern districts of Tamil Nadu in all Vessel shops. Now let’s how to prepare this traditional Achu Muruku

    Achu Muruku Recipe

    Ingredients:           

    Raw Rice – 1 cup
    Maida – ¼ cup
    Coconut Milk – ½ cup
    Ellu / Sesame Seeds – 1 tbsp
    Egg – 1
    Salt a pinch
    Sugar – ½ cup
    Oil for deep frying
         Method : 
          1.    Wash the raw rice really well and allow it to dry for 2 hours and then grind it to form a fine powder
         2.    In a big vessel crack open the egg and beat well to this add in sugar and Maida mix well till the sugar is completely dissolved.
          3.    Extract the coconut milk and add it to the egg sugar mixture.
          4.    Next add in the powdered raw rice and mix well using hands or any spoon .If preparing in large quantity mixing with hands will be comfortable so that no lumps remain in the batter. 
          5.    Next add in the sesame seeds and mix the batter it should be similar to dosa batter consistency .not too thick or too thin. Heat oil in a kadai for deep frying and keep the mould immersed in oil so that the batter can stick to the mould when immersed.
          6.    Dip the mould such that it is ¾ th immersed in the batter and not fully dip it in hot oil .Shake the mould after few secs so that the murku separates in oil and you can use the mould for preparing the next muruku.
          7.    Once it is fried crisp remove from oil and drain in paper towels. It is now ready to serve.
      Notes:
           ·       You can also skip the egg by adding more coconut milk a little more.
           ·       Make sure the oil is very hot for the muruku to come properly.
           ·       Adjust the amount of sugar according to your preference.

    Halwa is a dessert which is usually prepared with any flour or fruits as a main ingredients. So today I have prepared a delicious Halwa with the healthy apple.

    It is so simple and requires readily available ingredients from your kitchen pantry. From the look of the halwa you will never identify it it’s made of Apple, only when u taste you will get to identify it is Apple Halwa. Now let’s see how to prepare this delicious dessert.

    Ingredients

    Apple - Use fresh crunchy apples for halwa. I prefer honey crisp or granny smith apples for halwa. We usually peel the skin and then use the apples.

    Sugar - We add regular granulated white sugar for sweetness. They melt and give a glossy texture to halwa.

    Cardamom powder - Adds a lovely flavor to halwa.

    Food Color - Its optional , if added gives a beautiful color to halwa. Feel free to skip if you do not prefer.

    Ghee - Gives texture to halwa.

    Nuts - Give a beautiful bite and crunch to the halwa.

    FAQ's

    Can we prepare apple halwa with condensed milk ?

    Condensed milk definitely works well and we can add it to prepare halwa. However granulated sugar gives a silky texture to the halwa.

    Can we make apple halwa without sugar ?

    If the apples are sweetener we can definitely prepare halwa without sugar. In that case we might need to add extra ghee to bring the texture of halwa.

    How to make Apple Halwa

    1.Peel the skin of the apple and make it as a fine puree using a blender .Instead you can also grate the apple. Add a tbsp of ghee and fry the cashewnuts and raisins till golden brown and set aside.

         2.In the same pan add in the apple puree and start cooking ,immediately add in the food colour and mix till it evenly combines and continue cooking till the moisture from the apple puree completely evaporates.

    3.Add in the cardamom powder and mix well. Continue cooking till it becomes dry.

    4.Now add in the sugar, it starts to melt and becomes glossy.

    5.Now add in the rest of the ghee and continue cooking till the halwa starts leaving the edges of the pan and becomes a whole mass. Add in the ghee fried nuts, mix well and switch off the flame.

    Tips & Variations

    • If your halwa is sticky you can even add more ghee.
    •  As you add more ghee the halwa become glossier and you will get the melt in mouth texture.
    •  Adjust the amount of sugar according to your preference.
    • Add crispy honey dew or grainy smith apple for best taste. However any variety of apple can be used.
    • Apple always go well with cinnamon flavor. So you can also add ¼ tsp of cinnamon powder. You can also add a pinch of nutmeg powder too.

    Standard 1 cup measures 240 ml

    Ingredients

    • 3 Apple
    • ½ cup Sugar ⅓-½ cups ( adjust as per sweetness of apple)
    • 2 tbsp Ghee
    • ½ tsp Cardamom powder
    • Food color a pinch (Optional)
    • 6 Cashew nuts
    • 6 Raisins

    Instructions 

    • Peel the skin of the apple and make it as a fine puree using a blender. Instead you can also grate the apple.
    • Add a tbsp of ghee and fry the cashew nuts and raisins till golden brown and set aside.

    4.    Next add in the ground coconut cashew paste and simmer for another 5 mins. Fry the cashew nuts and raisins in ghee and garnish the payasam and switch off the flame.

    • 500 ml Full Fat Milk
    • ⅓ cup Kodo Millet
    • ½ cup Sugar
    • 1 tbsp Ghee

    To Grind :

    • 3 tbsp Coconut
    • 8 Cashew nuts

    Instructions 

    • In a sauce pan add in the milk and bring it to boil .Wash the Kodo Millet rice and allow it to soak in water for 15 mins.
    • Once the milk comes to a boil, simmer the flame and add in the soaked Kodo Millet Rice, Continue cooking until the rice is fully cooked.
    • In a blender add in the coconut and cashew nuts along with little milk and grind it to form a fine paste. Keep aide. You can keep a wooden ladle on top of the sauce pan, this prevents the milk from overflowing .Next add in the sugar and mix well.

    Kesar Lassi Recipe | Saffron Lassi with step by step photos. So finally we have come to the last week of this Mega Marathon. It has been so good so far and I’m loving this month long Marathon.  After the Sundal recipes here comes another week and the last week of this month and I am going to share some yummy sweet dishes this week fully. So starting it with a yummy Kesar Lassi.

    I will say I am kinda addicted to Kesar Lassi .During my collge days I used to visit sowcarpet very regularly and I never miss to taste the famous Anmol Kesar Lassi. Since then I use to prepare this regularly and it is my favourite drink. So today I’m sharing my fav version of Kesar Lassi.

    Kesar Lassi Recipe | Saffron Lassi

    How to Prepare Kesar Lassi, Pictorial

      1.    Soak the Saffron/Kesar in Luke warm milk and let it sit for 10 mins after that the kesar will infuse its colour and the milk will become light yellow in colour.

     2.    In a blender add in the Yogurt and Chilled Milk.

    Step 2 - Saffron Lassi Recipe

    3.    Next add in the Saffron Soaked Milk and required Sugar.
