    Vellai Kurma is a very famous restaurant style curry. It is usually served along with chapatti or Poori. It is very easy to make and can be prepared in less time.

    The Wonder white masala does the magic in vellai kurma. Coconut and cashews make it rich. The Best thing about the gravy is it is Vegan

    You can also use frozen or fresh green peas for cooking white kurma. Along with Green peas, we can also use a variety of vegetables. Carrot, Beans, Cauliflower, and Potato also go well with the kurma.

    White Kurma

    White Kurma is a famous Restaurant style base gravy. It uses coconut along with cashew nuts or Poppy seeds. It gives the gravy a very rich and delicious flavor. White Kurma is one of the signature dishes in the restaurants of Tamilnadu especially Saravana Bhavan.

    You can use any vegetables in the gravy. A mix of vegetables or even legumes or lentils.

    Vegan White Kurma

    The best part of this gravy is it is Plant-based and Vegan. Makes it much loved by many. We can easily adapt it to suit our taste.

    Variations in white Kurma

    White Kurma has a strong flavor from the spices added for tempering. It gives a distinct flavor. The species added to make it different from the stews which are very famous in Kerala.

    ✔ Instead of coconut, We can also use Coconut milk

    ✔ We can use a mix of vegetables.

    How to make White Kurma with Peas

    1.    In a blender add in the ingredients mentioned under “To Grind” section.

    Heat oil in a pan once it heats up add in Cumin seeds, Fennel seeds, Curry leaves.

     Next add in the chopped onions and saute till it turn glossy.

    Then add in the ground coconut cashew paste along with required water. Bring it to kurma consistency. You can add 1.5 - 2 cups of water.

    Add Required Salt. Combine and cook until the gravy boils. Let it simmer and cook for another 2 mins.

    Next add cooked green peas. You can also use fresh or dried green peas. If using dried peas , Soak them overnight in water pressure cook for 3 whistles and then use.

    Standard 1 cup measures 240 ml

    Ingredients

    • 2 cups Green Peas
    • 1 Onion
    • 2 tbsp Oil
    • 1 tsp Fennel seeds
    • ½ tsp Cumin seeds
    • Curry leaves a spring
    • Salt as needed
    • Water as needed

    To Grind :

    • ½ cup Coconut
    • 15 Cashew nuts
    • 2 Green Chilli
    • 1 tsp Fennel seeds
    • 1 inch piece Cinnamon stick
    • 2 Cardamom pod

    Instructions 

    • In a blender add in the ingredients mentioned under “To Grind” to a fine paste by adding 1 cup of water and set aside.
    • Heat oil in a pan once it heats up add in Cumin seeds, Fennel seeds, Curry leaves.
    • Next add in the chopped onions by adding the required salt till it turns glossy. Then add-in the ground coconut cashew masala.
    • Mix well and add in the required consistency and bring it to boil in a very low flame. Next, add in cooked green peas.
    • Mix well. Check for salt. Cook for another 2 mins and switch off the flame.

    · You can also add veggies like carrot, beans, potato along with the green peas to make the kurma more colorful.

Rice Krispies have a crunchy texture and hence when added to chocolate it give a nice bite. Chocolate with a rice krispies texture is heaven in every bite.

    I have used microwave oven for melting the chocolate if you don’t have one, Use a double boiler to melt the chocolate in stove top. Instead of Rice Krispies you can use Cashews, Almonds or pistachios. Now lets see how to make Rice Krispies Chocolate Fudge.

         1.    Take the cooking chocolate in a microwave safe bowl and microwave it for 1 min. The chocolate will start to melt now. Mix well and then add in the condensed milk.

    2.    Mix again and add the butter. Microwave it again for 10 secs.The butter will state to melt now. Mix everything so that it is evenly mixed.

    Sura Puttu or Meen Puttu is a yummy delicacy prepared with paal sura or shark fish. It has medicinal properties and good for lactating mothers.

    Fish Puttu Recipe | Meen Puttu | Shredded Fish Stir Fry with Step by step photos. Meen puttu is a popular south Indian Sea Food Recipe. It is usually prepared with Shark (Sura meen) Fish or paal sura meen . We can also use any fish variety that has less bones.

    It pairs very well with rice. It is very good for lactating mothers as it increases the breast milk supply. Now let’s see how to prepare Meen Puttu.

    Fish Poriyal

    There are so many names for this humble sura puttu. It is more or like a bhurji we scramble to shredded fish pieces along with the onion and spice powders. It is so easy to prepare and just yummy. If you are including sea food in you diet regularly. I recommend trying this easy and yummy fish podimas recipe.

    Sura Puttu benefits

    Fish puttu has lot of medical benefits especially paal sura fish which is primarily used in preparing the dish

    It increases the breast milk supply for lactating mothers and hence they try to feed the fish in some form.

    Ingredients

    Fish - Use paal sura fish for the best results.

    Oil - Cooking in coconut oil gives a fresh and authentic taste and hence I highly recommend it. If you are not a fan of coconut oil you may still cook with groundnut oil.

    Onion - Use red onion or shallots as you prefer.

    Spice powders - Very minimal spice powders we use just the turmeric powder, Chilli powder, and pepper powder.

    Coconut - gives a nice taste and volume to the dish.

    How to Prepare Meen Puttu

    Cook the Fish

    • In a pan add in water once it boils add in a required salt and a pinch of turmeric powder and cook the fish till it’s done and switch off the flame.
    • Allow it to cool down and then. Remove the bones from the fish and shred the fish in to small pieces.

    How to make fish puttu

    1.Heat oil in a pan once it heats up add in Mustad Seeds, fennel seeds, urad dal.

    2. Let it splutter and then add in curry leaves and ginger garlic paste. Cook till the raw smell leaves.

    3. Then add in chopped onions and green chilli. Cook till they turn glossy

    4. Next add in the shredded fish pieces and saute in a low flame for 5 mins.

    Sura meen puttu is now ready to serve.

    Tips & Variations

    • We can also prepare shark fry or shark curry too with sura fish . You can follow my shark fish curry recipe and shark fry recipe in the blog .
    • Chettinad sura puttu recipe - You can follow the same recipe. Additionally we add a special freshly ground masala in the chettinad style sura puttu.
    • Sura puttu kerala style - Almost the same but they make sure they use only coconut oil for cooking . Also add more freshly grated coconut.
    • While cooking the fish you can either steam cook for boil the fish.
    • Steam cooking the fish is what I recommended as they retains the nutritional properties.
    • If you dont have access to sura meen or shark fish you can use any other fish. Make sure it has less bones .
    • Seer Fish , King fish, Mackerel fish are few other best options.
    • You may also add egg and cook along with the fish.
    • skip coconut and add egg if you prefer.
    • You can also use canned fresh if fresh ones are not available. If using canned fish you may skip the steam cooking part.

    Serving Suggestions

    Meen puttu goes well with steam rice and any curry. My favorite combo is White rice, verum kuzhambu, Fish fry and fish puttu.

    Chettinad Chicken Curry Recipe | Chettinad Chicken Kuzhambu with Step by step photos. Chettinad cuisine is famous for its aromatic freshly ground masala recipes. It is so flavourful and aromatic due to the freshness of spices and ingredients used.

    Traditionally it is ground using ammi kal but these days we grind the masala in mixie.However authentic Chettinad chicken curry is the best one to go with. Now let’s see how to prepare Chettinad chicken curry

    Chettinad Chicken Curry Recipe | Authentic Chettinad Chicken Kuzhambu

    How to prepare Chettinad Chicken Curry

    1.    In a pan dry roast the ingredients mentioned in the “To Roast and Grind” section one by one.

    2.    Once roasted allow it to cool down completely. Add it to a blender and grind it to a fine paste by adding little water

    3.    In a pressure cooker add in the oil, once it heats up add in fennel seeds, Cinnamon stick and curry saute for few secs and then add in the shallots and ginger garlic paste saute till glossy.

     4.    Grind the spice paste and keep it ready. Add chopped tomatoes to the cooker. Once it is mushy add in the ground masala paste.

    5.    Add little water and cook till the raw smell leaves. Next add in chilli powder, Turmeric powder and the required salt. Mix well and cook for 2 mins.

    6.    Now add in the cleaned chicken pieces. Close the cooker and cook in a medium flame for 2 whistles. Let the pressure gets released on its own. Once the pressure is released open the cooker. Garnish with a generous sprinkle of coriander leaves and serve.

But it also goes well with paratha and roti varieties. When mangoes or in the season I would never miss making some aam ka raita for myself.

    Make sure to consume it immediately after preparing, it so that it tastes good. Since it has citric particles in it it is not good to prepare it and consume it late. In such a case what you can do is carry the mango cubes separately and whisk curd with other spices and carry separately. Just before you eat, Mix the curd and Mangoes and it can be had.

    • 3 Nungu / Ice apple
    • ½ tsp Rose extract
    • 1 cup Chilled Milk
    • 3 tsp Sugar

    Instructions

    · Add boiled and cooled milk.

    Nungu Paal Recipe| Ice Apple Milk with Step by step photos. Nungu Ice Apple is a famous summer fruit and is best known for its cooling effects. It keeps the body chill during the hot summer. In my native especially during summer, there will be plenty of street vendors selling Nungu and I miss the same here in Chennai. However last week I could source some and happily made this Nungu Paal (Milk).

    Check the Nungu Sarbath recipe too which is a famous summer street drink.

    How to make Iceapple Milk

         1.    Remove the outer skin from ice apple and chop them into small pieces.

     2.    In a blender add in Sugar, Cardamom pods and 1 ice apple chopped and blend to a fine puree.

    Coleslaw is a famous summer salad from the country of Netherland. It primarily consists of shredded cabbage along with mayonnaise dressing.

    I prepare coleslaw and used to serve along with wraps and rolls along in shawarma along with some cooked chicken. They just taste out of the world.

    Coleslaw mix - Use a mix of cabbage and carrot. I am using half and half white and purple cabbage , it gives a lovely pop of cabbage in salad.

    Dressing - We prepare a creamy dressing using mayonnaise, maple syrup, vinegar and a hint of salt.

    Is it healthy to eat coleslaw?

    Coleslaw is a healthy salad as it has raw vegetables. But the issues is with the dressing. It has mayonnaise. It is not a healthy ingredients to include in the diet daily. If its once in a while we can use coleslaw as such. Otherwise you can skip mayonnaise and use greek yogurt or Hung Curd as a replacement and have it daily.

    What is coleslaw made of?

    It is made of raw shredded carrots and cabbage along with a creamy dressing. It is easy to prepare. Just prep vegetables toss the dressing and refrigerate and use as you prefer.

    Is coleslaw eaten cold or hot?

    Coleslaw is a cold salad. It is often enjoyed cold.

    In another bowl add sliced cabbage and carrot. I am using white and purple cabbage. To this add the prepared dressing.

    Creamy and delicious Coleslaw is now ready.

    You can also add lemon juice instead of vinegar.

    You can serve the salad along with rolls, wraps, shawarma or simply as a salad.

    Storing Suggestions

    Store them in a air tight container for up to 3 days. As we use mayonnaise base , we cannot freeze it.

    But you can always prep the veggies and store them. Just before serving prepare and toss them in the dressing. This way it stays fresh.

Really tough to convince my daughter to eat a salad. And one fine day with all the handy ingredients I involved my daughter while preparing this salad.
